- The chemistry behind baking powder and baking soda. What are they and how do they work? Baking soda is composed of one single ingredient - Sodium Bicarbonate. Baking powered is composed of two or three different ingredients. One sodium bicarbonate mixed in an exact proportion to a dry acid.
Knowing the fundamental basics of their composition enable one to know when to use them and why one is used instead of the other.

I got a white mystery baking powder in an unmarked container and I forgot whether soda or powder. Trying to look for a way to tell the difference :P
Edit: Oh cool! I guess I can just put some water in it and if it fizzes up then it's baking powder :D
