Wanda trapped Agatha in that spell at the end of Wanda vision, so I think that whole sequence where she is a detective is part of Wanda's spell where she thinks she's a detective
I feel like when Wanda removed the hex, it changed Agatha again to better suit the surroundings. Plucky Agatha at the end of Wandavision suited the town before Wanda removed the hex but not so much when she brought it down.
