    Me personally, butter, garlic, thyme, onion, on the inside. Season with salt n pepper then stuff with lemon and put three lemon pieces on top then place in oven at 375 until cooked
    So delicious my fam always baked trout this way

    Just caught my first two brook trout today and I cooked them just like this! It was delicious. The best tasting fish I've ever had.

      Usually only eat the browns and rainbows. Brookies have been getting slammed population wise by the brown trout.

      Did research canvassing populations in PA. We only found brook trout populations in like 3 or 4 tributaries out of maybe 30 total. Browns in every damn one

    When i go fishing i catch one for my dog and cook his trout without seasoning. He loves to go fishing and gets excited when i cook fish. Man's best friends gotta eat good too

    Try it without the olive oil...just use butter. Throw in some sliced or slivered almonds to the butter to brown with the fish.
    You can thank me later.

    Too greasy for me. I gut mine while I’m on the water clean it well then throw on ice. Bring home and fillet them take the bones out too. But leave the skin. Season add bits of onion sliced lemons sliced potatoes and brush some garlic olive oil on both sides. Season everything again throw on the bbq skin side down just like that and let it cook.
    It’s my go to way to prepare any salmon or trout especially if the meats nice and orange. Whiter meat I might changed it up but I’ve had people tell me it’s the best fish they’ve ever had from big rainbows with nice orange meat.
    Everyone loves the skin too once you convince them to try it.

      Yeah we eat the skin sometimes. We filet them if they are big enough, but small trout we just cook whole and eat the meat off. Sounds good though!

      @@TheUrbanHunter. I think the most "exotic" freshwater fish I've had is walleye and I love it, especially fried. Salmon is decent, but not my favorite. I wish I lived in an area where I could find it somewhere on the menu or even at the store. Too suburban around me. That or get into fishing haha

      I do that too, especially if they are thick trout. This guy was pretty small so I wasn’t as concerned with even cooking. But good suggestion.

    Pro tip: instead of forking the meat off the bone, just pinch the spine where u cut off the head and lift up. Helps to support it with a spatula, but the meat will slide off the bone. Flip the filet and spine that you have on your fingertips and lay it down skin side down. Lift the spine again and you have 2 filets. Just take off the fins and 99% of the time have 2 clean filets.

    My favorite is to fillet it and remove skin. Rub on Mayo. Sprinkle on salt and pepper. Rolling pin on bag of potato chips... coat fish in ground potato chips. Pan Fry in cast iron skillet with one full bar of salted butter and a little olive oil and try not to tell me that's not the best pan fried trout you've ever had in your fishing life.
    Caveat: I wouldn't recommend eating this more than once a year since it may help to kill you.

    I do this with small bluefish during the summer months. Just garlic and olive oil though. I’ve never trout. I only saltwater fish. Gotta try

    Hi, lots of fisherman swear by frying them in batter like the takeaway’s from fish & chips! Personally I like them either smoked or bottled. I tried cooking then whole but could not get a utensil large enough. As we hunt for our steelheads during their runs from the lake up the rivers to spawn during our winter, I like to dry them overnight in rock salt, wash and dry them, rub in a little drop of sesame oil and rub them with Manukau Honey mixed with a bit of Whiskey. Let them dry a bit and then smoke them using sawdust from used wine oak barrels or Manukau sawdust. Beautiful to eat. Bottled trout should be kept sealed for six months and then eaten, great tucker.       Wow. Thats a hell of a process and sounds awesome. One of the reasons I love fishing for trout/salmon is because a local in Canada let me try some of their smoked fish and it was one of the best things I had ever eaten. That sounds incredible my friend.

Our Pacific salmon from pristine waters are really good and healthy. What I love about hunting fish or game in this country is the absence of bears and snakes. What we have to be careful of in the bush and mountains is weather turning suddenly, deep natural holes in the ground and idiots! Cheers mate. Harera

    You can barely tell that those are rainbows. The pink stripe is like super light. And the fish are like white? Somehow

      Rainbows lose all color within about 15 mins of expiring. We put the fish on ice alive and drive 30 mins home on a 30 degree day. Other trout seem to fare better.

      Partially true. You still get all the fatty acids but you def get more fat from the butter. It’s not a lot though. Most of it melts and drips off.

    Small tip, use regular olive oil when cooking. Extra virgin has more flavor and is better for things like dressings.

    Rainbow trout have fine scales , I was camping up at Montebello camp ground and seen a old man and his son eating fresh trout and told him about the scales after he'd been eating them for a couple days .

      @@TheUrbanHunter. fish, chicken, you name it. Not sure I've fried anything that wasn't better in beef tallow. In case you haven't used it before; it doesn't really impart any kind of beef flavor, it just tastes a little better than most seed or vegetable oils IMO.

      @@TheUrbanHunter. I hadn’t seen it in the comments. For neutral oils, you could go canola, vegetable, peanut, grape seed, avocado, for example. Olive oil is great, just gotta keep it medium heat or lower because it smokes at a low temp.

      100% after cooking will leave you with much more meat and much less time wasted. The meat sticks to the bone before cooking. After cooking it falls right off.

    Looks good but I would never cook with extra virgin olive oil. Coconut oil goes really well with rainbow trout. Otherwise use lard, beef tallow, or ghee. Really high heat to crisp the skin perfectly.

      Good recommendations. I choose olive because I like the healthy fats in it. Lard burns at a lower temperature so I don’t use that too much. Thanks

    Why do you season the skin just to tear it off? If you use a rough sponge you can scrape all the little scales off and then season it and then eat the skin too

      It soaks in some. We definitely do eat the skin sometimes. Just wanted to show the meat coming off the bone. Sometimes we score the trout as well and eat it in chunks with the skin on. Just depends on the mood I’m in and how hungry I am. Sometimes the dog gets a lot.

      Just give them a rinse off. They aren’t particularly slimy fish like say a catfish. It’s not much of a concern.

      Sauté the fish. Which has the seasoning in the liquid. Trust me it gets in the meat :)

      I’m sure she was over 140. Fish cook really fast since they’re lean. Totally agree.

    A trout that size would be good to butterfly, alot more flavor penetration, less oil and no butter skin would get crispy meat would blacken

      I’ve never butterflied a trout. Have you? I feel like it would be hard to cut right down the little spine to get it in half.

      @@TheUrbanHunter. you just ride the spine on one side or the other, good for grilling larger trout too, spine and bones will pull right out if your gentle with it after its cooked

      Are you serious? I’m a 51 year old angler from Louisiana. We have such a variety of different species of fish. I’ve caught and cooked everything from blue gill to blue marlin. I’ve cooked fish in so many ways I can’t even count, but I have NEVER heard of eating scales! Rainbow trout have been introduced to our state, and being and angler all my life, I was determined to learn how to catch them! That took me 3 fishing trips to figure out, but I got it now! Now I’m trying to gain knowledge on the best way to cook them, and people are telling me not to scale them! This is going to interesting.... You try to eat a fish from Louisiana, the Mississippi River, or even the Gulf of Mexico, with the scales left on, and your going to be in trouble! One person said, “I find them much crunchier with the scales left on”. I said, I guess you do!! You must have teeth like a grizzly! Lol... I guess the worst case scenario, I can just peel the skin and all away once their cooked... But if I’m going to do that, I just assume baking them in the oven, it’s less mess. But, the cooked skin does look very delicious. I just can’t see eating scales. That’s crazy. What makes a rainbow scales different from any other fish? I got questions...

      @@airadaimagery692lol. Very serious. Obviously if I cook a largemouth, crappie, walleye, bluegill or whatever with the skin on, you have the scale them. Trout and salmon sales are like microscopic. When you eat the skin you wouldn’t even know the fish has scales. Give it a shot. Best to make it a little crispy if you can. It’s like a chip. Anyone trying to take scales off a trout/salmon species is just wasting their time.

      @@TheUrbanHunter. yes, I did see a scale. It was very tiny. I was thinking there’s no way I’ll be able to scale these fish, in any reasonable amount of time... But, this is good news! Will soon find out. Thanks!

      Try a walleye or even a big perch. They have silver dollar sized cheek meat. Nice bite sized snack that not a lot of people know about. Cheers
