"Hey Jeff. When are you gonna make a lasagna already?!" they keep asking me. This is a perfectly valid question as it's a very popular recipe for the Instant Pot but also because I LOVE lasagna.
Well kids, I didn't really see the point in having to crack noodles into a circular shape to fit into a pot and lasagna so I decided to think outside the layers. Say...why don't we make them in an individual ROLL FASHION instead?! Not only is this easier for portion control and cutting out on the serving mess, but you get so much more cheese and sauce in every bite too!
This is also my first pot-in-pot (PIP) recipe! And I can't wait to do more with these AWESOME stackable pots which you can purchase at my essential products page below!
It's also SO fun and easy to make and it doesn't make your kitchen a furnace with the oven blaring as a lasagna bakes for 40 minutes! I am telling you right now that you'll never make lasagna the same way in the Instant Pot again! No more messy layers and the cracking of noodles. Nope! Lasagna Rolls is now how I roll!

Someday, do yourself a favor when making Lasagna:
Take some slices of (pizza-type) pepperoni, and “grill” them slightly on a cast-iron griddle (comal) just so they get a little bit of brown marks on them, not too much, just slightly.
Then place these “grilled“ pepperoni slices, layered in & throughout your layers of lasagna.
Their “grilled” texture gives a special kick to your Lasagna!! (Still add your scrambled ground beef into the tomato marinara sauce!!)

You are the King of Instant Pot recipes.
He’s absolutely right about them being perfect portion sizes. I’ve made them several times and we’re a small family so some would go to waste. I’ve found that portioning them into individual freezer bags with a ladle of sauce freezes perfectly. Pull them out of the freezer before you head to work and they’re ready for the oven when you get home.

This looks FANTASTIC! I got my Instant Pot a couple months ago and will be making this tonight. I'll be adding some spicy sausage to the ground beef and also adding sweet peppers and mushrooms to the sauce. QUICK TIP - I learned this a while back and it works great. Instead of boiling your noodles just let them sit in hot water while you're cooking the meat sauce. They will be soft enough to work with but not totally cooked. Add extra sauce when cooking and they will absorb some of the flavour and come out perfect.

Actually made beef bourguignon this weekend loosely following your recipe and it was amazing! Also did the pesto chicken the weekend before and man o man is it good warm! It's been years since I've made them! These are excellent when made ahead and frozen in packs of 2 or 3 for when you NEED a lasagna fix.. just add sauce! Thanks for reminding me of these!

I have made sauce in the slow cooker and on the stove but never in the instant pot and man did it come out amazing!!! The Ekovana pots were smaller than I thought, unless my roll up lasagna's were too stuffed so I did 2 batches. I had left over sauce that I froze for later. Thank you!!! yummy

I made this and they turned out great! Two caveats though: I bought stackable Pans from Amazon made by Joy from India. Don't buy these if you have a 6 quart. You cannot close the lid if these 2 pans are stacked on the trivet. These pans are deeper than the ones Jeff uses. (3" vs 2.5"). I removed the trivet and made 4 shallow spacers out of tin foil and got it to work. Buy the pans Jeff recommends.
Also, don't try and add meat sauce on the noodles after spreading ricotta cheese on them. As you roll the noodle, the meat will just squish out the sides and make a mess. These were really good and I'll make them again. 10 min cook time worked well.
This is delicious. I did follow your recipe with my own sauce. I also used lactose free cottage cheese with garlic and a bit of sauce to make the rolls as I am lacoste intolerant. And lactose free mozzarella, it is equally delicious. In case anyone was curious for a lactose free version.

I just tried this and used Italian blend cheese and Bertolli olive oil and garic pasta sauce (it's what I had on hand) and WOW it turned out absolutely perfect. It was more fun to make than the layering way too. I also went and got the stuff to make your upside down Pineapple cake and will try that asap, looks fantastic. I'll post again after I make it. Thanks for all the great recipes and I just subscribed.
Made this tonight. I substituted ground beef for ground Turkey I used a four cheese marinara and This was so freaking amazing. I mean I will never make another version. I can honestly say I am never disappointed my your receipes. THANK YOU

I am a lasagne lover and like you I think I would prefer to bake my traditional lasagne in an oven. However I also love this idea for an alternative and am definitely going to try this out when I get my instant pot. They look delicious. I think also this dish would freeze well. Yummy :) PS would love your super power of chopping veg instantly with one snap of fingers. :)

add spinach leaves to the lasagna noodles before you roll them up......it's soooooo yummy. :)
v mcmahan I agree. Spinach was a fantastic addition to my rolls. I’d also added a little of the meat sauce to the roll.
I put chopped spinach in the ricotta cheese layer. Hides better from the kids, tell them it's parsley.

I made this tonight and it was amazing. I have never liked ricotta cheese, but the video convinced me to try this anyway. I'm so glad I did. I will definitely make this again. Next time i'll add spinach to the ricotta mixture and maybe try putting a little bit of the meat sauce into the rolls. Excellent recipe Jeffrey.

These were company good, I must say. I had a bit of a challenge as I only have the 3-quart model and no stacking pans. I simply made foil packages. I think I want to try this with manicotti noodles next time. By the way, I got six rollups with half the recipe.
Okay, so this is really no different then regular lasagna/lasagna rolls except it’s an easier, one pot method. I used my own meat sauce which I already had on hand (frozen) so it was especially easy. Never knew about that ecovana pot (thank you...bought it). That is what made this recipe so good and easy. No fuss meal which is what an instant pot is all about. Thanks again
Oh heck yeah! My mouth is seriously watering! I don't have a drop of Italian blood in me but I'm a sucker for a good lasagna! I don't have that double decker thingy tho and since I use a different pressure cooker, I'm not sure what I could use. Even if I have to do this on the stovetop, I'm making this! Thanks, Jeff!!!
You can buy them if you think you'll use them a lot! I'll making many more recipes that utilize these as well!
Kym Gregorich .. I made a cheesecake in my standard pressure cooker using a Wilton Round cake pan, just small enough to fit inside the pc, then covered the entire top of cheesecake with aluminum foil to prevent water getting on top. placed the pan on top of a metal trivet inside the PC. Be sure to add at least 1 cup water before cooking. I don't see why you couldn't use the same for the lasagne rolls.

Hey Jeff, This looks good, I am SO glad that you did a video using the Ekovana pans! Try adding 1/8 - 1/4 teaspoon of nutmeg in the ricotta mixture, that's how my family does it, and it gives it that nice touch. Can't wait to make these, Thanks!

This is a great recipe to double and either freeze or gift to an ill friend or family member. I can’t wait to make this one.
Looks great and I'm betting the rolls could be frozen and then when you want this dish, pull out the amount you need and follow with the finishing steps to heat and melt the cheeses. My grocery list just grew! 😃

we're having this for dinner tonight. the 2nd panfull will be cooled,, vacuum sealed & frozen for another meal later.
I just got the 8qt Duo (haven't used it yet) and have a stainless Tiffen box set, wonder if it fits I can use it in a similar way as the pot-in-pot cooking
Wonder if it wouod work with eggroll wraps for the pasta. That works great in the oven. Like my nonni’s home made. Those rolls loo soooooo delicious.
Don't add oil to the pasta water people! The pasta won't stick to its self unless you like your pasta mushy. This looks great, I can't wait to make it.

this is the second time I have made this awesome recipe. My only issue is that the rolls aren't hot enough at 10 minutes. I increased them to 12 minutes this time, however, still not hot in the PIP. I'm waiting right now, because I took them out and rinsed out the pan and started them again for 12 minutes. I wonder why mine don't get hot like yours? Any ideas?

For my small family, I’m going to line the second pan with plastic wrap, put rolls in and freeze it, then pull out the frozen puck & put it in a freezer bag- all ready to put back in the pot to cook another day. Is it okay to cook just one layer of the Ecovana without the spring clamp?
Could fresh pasta noodles be used instead of boxed lasagna noodles? I am assuming that they would also need precooked before being used.

Love your channel a lot, but I cringed at “throw them away” regarding the not perfect noodles. Just use them in something else, with a little extra sauce, etc. don’t waste them!!!

Regina Darlin You don’t need to throw them away. Just because they’re “imperfect” doesn’t mean they won’t taste just as good as the others.

My mom would let me eat the extras/leftover broken noodles with extra sauce when I was a kid. Also, if needed, The broken noodles patched together made up the layers. She never had a pressure cooker. I need to get the insert pots so I can make some lasagna! 🤤
Me too! glad I'm not the only one....I feel bad anytime I have to throw food away, but I really make an effort not to.
instead of buying a fancy pot to fit inside... you could use corning ware or an anchor hocking glass bowl and alum. foil.

You don't have to use the brand that he keeps mentioning but those pot in pot type pans are great for a lot of different things. Granted you can use other vessels but these types of pans have so many uses in the instant pot. I use my Sorker PIP pans frequently. Nice for all kinds of recipes!

I’m a little spoiled when it comes to the sauce. I use San Marzano crushed tomatoes, using a cherished family recipe from my BFF. And since I don’t eat red meats, I get spicy ground turkey or chicken sausage.
