    1 1/2 cups milk powder
    1 tbsp baking powder•
    375 F. 11-13 min

    NOTE:
    I made an error in my carb calculation
    I read package as 3/4 cups not 3 tbsp
    Therefore:
    12g per 1/4 cup
    1.5 cups = 72g or
    12 g per bun NOT 4

    Couple suggestions from someone who has been there:
    1) add beef college OR gelitin to the mix (1/2 oz)
    2) instead of milk powder, use heavy whip cream solids (powder)
    3) put the batter/dough in the freezer for an hour for easier handling on the bench.
    4) use the bench scraper to pull ad scrape the dough off the parchment or board for less waste

    Great video! I need to try this for my child whose behaviour drastically improves when eating carnivore- ketovore. I use a combo of baking soda and cream of tartar instead of baking powder.

    Oh boy - just what I needed!! 😊 I am soooo tired of putting my meat on a bed of lettuce (which I KNOW isn't proper carnivore, but makes the meat more interesting!) At last, I can put my meat into a bun. BRILLIANT! Thank you so much.

    This is the first time I've ever seen you. I definitely have subscribed. I have tried going straight carnival and can't. I can't get enough. I have many health issues. One being IBS.
    Everybody's is on the new way of powdered egg whites, which really hurts my intestines. It is so refreshing to see somebody who's not doing the same. You've given me some hope, thank you. By the way, you're very pretty.

    glad I stumbled across your post, you seem to take a similar approach to carnivore as I, "WHAT WORKS FOR YOU" I might try to make the buns. I am into my second year as primary carnivore, the changes to my over all well being and health profile have been quiet dramatic. I doubt that I will ever go back to my earlier eating habits. There have been lots of temptation but with each time it has gotten easier, with a little reminder of how much better I feel. !!!

      I am just new only 2 months and I am shocked at how I feel and the changes already to my health. I have lost 12 pounds and my autoimmune issues are fading into the universe :0)). I love these buns all the other eggy and pork rind buns were awful IMHO.

      @WendyDussault that is great that you're doing so well! stick with it the benefits are just amazing I have not really experimented with bread replacement, I have tried one of the cottage cheese flatbreads and I really do not care for it. This posted recipe looks pretty simple and I might try the biggest thing that I miss is fresh fruit and it was probably 10 or 11 months in before I gave in and had some watermelon I just felt like hey I'm going to see how this affects me and I do believe that I will have the occasional seasonal fruit

      Thank you so much….I will indeed start again as it feels so much better indeed. I started Nov 1 so this was my first slip. I appreciated your reply. The invitations out to dinner are a challenge as I am so new to this that I am unsure how to politely tell someone, I will just eat meat…lol. I suppose I could treat it as a food allergy now that I know full well how it makes me feel. I am so curious how other people handle that scenario. lol.

      I find one slip can lead to a few more days and then a few more days so you have to stop it right away. I’ve been there I get it.
      Best way to deal with people is to say you cannot tolerate gluten or legumes and since you have adverse reactions to so many fruits and vegetables, you are currently avoiding them all.
      A great way to prepare for dinners out is to eat a big steak before going. You will be so full that you won’t be tempted by those sides. Then you can just help yourself to a bit of meat.

    I am going to try those buns.
    I also homestead and like to grow veggies in summer. I am going to grow cucumbers cause I like to ferment and make lacto fermented pickles.
    I have been doing same as you with diet. We raise much of our own meat and eggs.

    Looks simple enough. I'm an Hvac guy not a chef but looks like for over a year and a half low carb I'm in on it alone to help myself reverse diabetes. My other half has no problems so I guess it's just my problem. 57 now and many vids on you tube are keeping me inspired to a proper human diet. Was thinking 1-1-2025 to do Carnivore for a month or so but might miss my heat. Bitting into a pepper or from salsa. Don't think I could get into support groups. Thank you for this video, as I continue on my journey it's good to know a better way is out there.. have a great and Happy New Year.

      Carnivore / Proper Human diet is what works for you!
      If you can tolerate a pepper and it doesn’t affect your health negatively, but it keeps you on track with your meat diet then go for it . This is not a cult. It’s a way of living that helps your health and suits your needs.

    I’m getting ready..planning strategizing and doing some carnivore meal prep and experimenting with a few recipes. I’m very experinced at low carb and keto and have had two successful short term (3 and 6 mos ) carnivore stints. This time I hope to get on and stay in the carnivore/ketovore wagon!

      I completely disagree, there are no deficiencies from an ancestral diet. And there are many qualified doctors that will back this up. I personally have done my research. I encourage everybody to do their own as well

    I would like to observe the effects of adding yeast and allowing it to rise. It should consume the lactose sugars and reduce the carbohydrate content. Additionally, a small amount of allulose could be used to retain moisture and inhibit the metabolism of any remaining carbohydrates.

      @@HomesteadOntario allulose is available here somewhere. i bought some in New Brunswick so i'm sure you can get it. it's a splenda product made from corn. there are 4 carbs per teaspoon though.

    By way of experimentation, had lamb roast stuffed with Lots of garlic cloves. I’d eaten about 5-7 cloves in total, some pretty hard. Had a low grade headache for 1.5 days about 12h after eating. Sure enough, googled it and garlic and onions irritates some nerve and is known to cause headaches! Will avoid those going forward, at least minimal and fully cooked.

      I dont know if this is of any help. But I continue to eat, onions, shallots, chillies, garlic, but I dehydrate them. Grow my own. If I eat any fresh I get really unwell, but dehydrated I dont? Is it because of some process by dehydrating gets rid of whatever makes me ill by eating these veg fresh ?

      It's been around since the Iate 1800's, it's essentiaIIy what Dr. Atkins did and Dr. Westin goes into detaiI about that. He's an M.D. who has integrated this approach into his practice for decades. He's not a recipe guy though, just vaIuabIe info. on pr0vabIe s cience.

    I just made these buns and I am shocked at how good they are, no eggy taste and I agree the crusty part isn't my favorite but it wont stop how good my roast beef will taste in them. I would HIGHLY suggest that you use a wet large ice cream scoop with this recipe, it makes the process effortless and I had them made in minutes. Great recipe it needs to go viral IMHO. I might add some butter powder to it just to see what that does and possible some yeast......or not they are good by themselves!!!!!!! I baked them at 350 for 25 minutes and they were not too flat but were quite brown but no burnt taste.

      High temp is for the high rise
      I have avoided the bottom, getting darker by putting them on the top rack of the oven instead of the middle
      Even though let me tell you the dark bottoms do not taste burnt at all

    ill have to try this recipe, I currently make egg white bun and are very good ,there is a 35% whipping cream i buy 0 carbs, if I freeze dried that it should work for the powder milk right?

    I just popped my first batch in the oven. I had to be creative because I only had powdered buttermilk. Hope it works. I only made 1/2 batch. We’ll see.

      @ they didn’t rise as well as yours. They have a little tangy aftertaste. Although taste better when cooled off. Mine have a weird lumpy texture even though I ground the buttermilk powder superfine. They’re edible. I’m going to use one for a breakfast sandwich. Not a total fail but def need tweaking. Might be good with some grated cheddar mixed in.

      The buttermilk powder I had actually had higher carbs than my whole milk, so make sure to read that nutritional list you have.
      I don’t make these too often, so I’m not going to stress about the carbs but once in a while, it’s a great replacement rather than caving in and having bread

    I found out I have a milk sensitivity with an IgG4 test. It was positive (Red) for bovine milk and casein. But I could try with goat milk powder perhaps?

    Sorry, I'm not getting your math.😢 The linked milk powder says 12 g carbs per 3 tbs. There are 4 tbs in 1/4 cup, that's 24 tbs in 1.5 cups. 24÷3 tbs = 8 servings x 12 g = 96 carbs ÷ 6 rolls = 16 carbs a roll. Certainly below most keto threshholds but 4 x what you quoted. Are you using a different milk powder or did I figure this wrong. Thank you and I will attempt these with substitutions. It looks delicious. 😊

      You are correct!!
      I read package as 3/4 cups not 3 tbsp
      But math is off a bit
      12g per 1/4 cup
      1.5 cups = 12 g per bun

    Thats about 65g of carbs in the milk powder according to my packet. 1 cup milk powder weighs about 100g so 150g powder in total. Thats 65g carbs for me

      I’m not milk powder expert, so I’m not sure what the difference is between what I buy an instant I assume they’re both freeze dried milk so if you try the instant, let us know how it works

      @@HomesteadOntario Picked up the whole milk powder at the bulk food store this morning...........they also had instant and non-instant skim milk powder but I didn't get those.
      But buns look glorious but they are collapsing.........I did have to add more milk powder so maybe I needed a tad more baking powder as well.
      Soon I'll find out how they taste!

    I made these a few weeks ago, and they were easy, quick, and delicious. The texture is just like real bread. However, if you have a milk allergy or sensitivity, be careful. After eating the buns, my stomach hurt for two days. I am extremely sensitive to powdered milk.

    I am having a TERRIBLE time with constipation. I’m eating lots of fat.
    I eat teaspoons of coconut oil, good quality olive oil. Eat the fattiest beef I can find. Always the the fat first in case I get full. Scramble my eggs in lots of butter. Gone 4 times in 6 weeks and each time it was so impacted I HAD to resort an enema every time to get it out. Last time I literally had to put on glove and dig it out.
    ANY suggestions would be SO APPRECIATED’ thank you!
    Yes, taking stool softeners as well. Drinking tons of water! 🧐

      Have you tried magnesium?
      I assume you are truly constipated. Remember you will have much less waste when you eat nutrient dense goods

      Freshly squeezed lemon in hot water with 1 teaspoon of sea salt (Celtic or Himalayan) will have you running to the B/R. Do this first thing every morning for regularity; but with just a pinch of salt. Aloe Vera juice (real aloe Vera juice made from fresh aloe Vera pads is best) is also very good for emptying, cleansing and deodorizing the colon. If the salt water and lemon juice does not work, you need to see the doctor ASAP; 4 times in 6 weeks is a very serious health risk. On an average I have 2 to 3 BMs every day if I eat lots of fiber from green leafy veggies and other sources of fiber. Hope this helps.

      We avoid leafy greens on a carnivore way of eating
      And you don’t need that many bowel movements in a day if you were eating nutrient rich food .
      The need for fiber is a myth

    I have tried these, and they were good but a bit sweeter. Does anyone know where to find milk powder without sugar? I also saw someone mention that you could use whey powder instead, has anyone tried it? Hoping for some insight before I spend the money on whey powder.

      The sugar is from the milk lactose not an added sugar .
      Ingredients are : Whole Milk, Vitamin D3.
      I have tried egg, white powder and whey powder breads, and they taste like Styrofoam to me so in fact, this is a sweeter tasting recipe. I still prefer it. I definitely do not use these breads a lot.

    I'm very sorry. Appart from the "Not an animal product" thing. Baking powder, even without corn starch, is chemical. And the problem with milk powder is not really the lactose, even though yes, lactose is a sugar, it's still animal product.
    The issue is, ultra-processed food. Which WILL cause inflammation...

    Sadly this recipe omits all Carnivores attempting to heal their Autoimmunity; my AS would flare up like a bat out of hell with Milk, Cream and any drop of dairy. My body overheats flashing all night long and my gut writhes in pain. I'd love it if people would say when their recipe includes Dairy, as in Dairy Carnivore. It's a frequent disappointment to start watching only to realize yeah, this ones not for me and it comes with disappointment. I should stop hoping, I suppose and just give up all not identified as dairy free.

    Powdered milk should not be used when you're trying to cut carbs and be in ketosis. There are 39 g of sugar and carbs in one and a half cups of powdered milk. Milk contains lactose, which is sugar. Milk and cream can cause weight loss stalls. Milk is meant for baby mammals. Do you know why because it helps them to gain as much weight as possible as quickly as possible. You are giving very poor advice to someone who is new to the ketogenic lifestyle. I am not the carnivore police, but I am someone who wants people to succeed with the ketogenic lifestyle. There is a portion of people out there who if they use milk will not accomplish their goals. They also won't have a clue why because they Listen to Someone Like You and believes that milk powder won't cause any issues which is completely false
