    RECIPE: ULTIMATE JUICY GRILLED BURGER
    1 pound good quality medium ground chuck beef (450 gm )
    1 large egg
    1/2 grated Spanish onion
    Sea salt and freshly cracked black pepper
    1 1/2 tsp. Worcestershire sauce (7 ml)
    ½ tsp. Smoked paprika (2.5 ml)
    2 -4 Tbsp. whole grain bread crumbs (25-50 gm )
    Salt and pepper to taste
    4 slices raclette or fontina cheese
    4 brioche buns, brushed with olive oil, split and toasted- if desired
    4 slices heirloom tomato
    Boston lettuce
    Pickles
    Mustard and ketchup
    Combine ground meat, egg, onion, Worcestershire sauce , paprika , salt and pepper and in a bowl and blend gently with hands until well mixed . Divide mixture into 4 pieces and work each pieces into a thick but flat patty as per video. Drizzle. Chill until ready to grill.
    Heat a grill on medium high. Cook the burgers until charred on the outside and just cooked through, about 3-4 minutes per side ( for medium ) melting a slice of cheese on each during the last 1 minute of cooking.

    Hi Christine.....Greeks and restaurants....LOL...yup...my Dad's cousin was married to a Greek fella and "uncle" Milton owned a restaurant in the 1940's in Vancouver and later worked as a chef in Banff. Your burger looks so yummy...I love a good burger at home that has some flavour. Gotta try this.....so hungry right now! Stay safe.

    Post-WWII migration of Greeks to Australia- a lot of them from rural areas and islands such as Kythera- worked in businesses a lot of us Anglo-Aussies didn't want to do. One was running fruit and veggie shops; getting up at the crack of dawn and working all day. [A comic "tribute" to this sort of person is the character 'Con the Fruiterer' from the show "Comedy Company".]
    Another was starting up cafeteria-style milk bars. Modelled on American diners, they were a hit and introduced the country to burgers and shakes and, along with the Italians, GOOD coffee! They also started up "greasy spoon" fish-and-chip shops. The stereotype of a huge Greek family working in the shop; the kids after school and the littlest being put on the cash register as soon as they were able to count and make change. It's something we poked fun of then, but I've always been kind of jealous of the structure and unity of the Greek family unit and the community of Greeks in this country in general. And Greek good!
    Now, I'm not only hungry and wanting a hamburger after watching this at close to two in the morning, I'm also all schmaltzy and sentimental.

    The Akroyd/Belushi skit from SNL was supposed to be based on the Billy Goat Tavern here in Chicago. And, yes, at least half the family restaurants and many of the diners were and are Greek owned here in the Chicago area.
    Nothing like a good burger and this one looks deeelicious! I will have to try it. Thank you!
    I just made burgers with Brioche buns the other day.. I like my buns grilled a little as well.

    Those burgers with the cheese look great and the buns are looking so tasty also and I would love to be there to join you and your family in eating them. As I watch this video my heart is racing as I yearn to be devouring one of them with the lettuce, and tomato on it. You have me so hungry right now and I have to cook up something to eat right now even though I just finished eating half a Subway steak and cheese foot long sandwich.

    Okay Christine, calling you on the one (he he he) I want to know how you got my burger recipe? The only difference is I use red onion and a home made white bread bun, but with sesame seeds. Do you have a spy satellite? Can you look through my computer's camera? All joking aside it nice to know I have been doing it right all along. Thanks, you're a doll.

    Here's a stupid question what if I want to eat it rare in the middle? It looks great just add parmesan and you have a flat meatball. Lol

      Thank you ! For a rare burger, just make sure the heat is smoking high and go for 2 minutes / side. Again , I always say that you have to make sure the beef was ground either by you , or a butcher the same day you are going to grill it.. Once ground any meat will proliferate bacteria much more quickly. Be well and enjoy !

    Super juicy an finally NOT FALLING APART! My daughter has egg dairy nuts allergy, what could I replace the egg with to hold the burger? Thanks

      elhirba I love it. To replace the egg, here are 2 options : 1 TBsp chia seeds mixed with 2 Tbsp water ( let stand 5 minutes ) or the liquid from a can of chickpeas : aqua faba . I hope this helps.

      MyFavouriteFoods ChristineCushing Thank you so much, I’ll try that. I never heard about these substitutions. I adore your channel, so simple and flavorful food like the Lambchop’s trick, melting the fat of the side and using it to cook the chops, genius!
      Question: would you make a French Lemon tart,the one you cut and it stays straight up, not creamy? My sugar dough crust always falls apart, I’m French and it’s my favorite dessert.

    Well, since I'm vegan, I love my incredible burgers (which taste exactly like these), but I gotta tell ya, I'm a mix-it-altogether kinda sauce maker. Ketchup, mustard, ranch mayonnaise, pickle relish (? is this French dressing ?), sauteed onion in cheese sauce and even American French fry sauce and top it of course with shredded lettuce, pickles and tomatoes. Your buns though are to die for I must say. It ain't worth eating if half of the insides don't drip down your arm. Καλή όρεξη😁

    Yum. Years ago I was adding soy sauce to my burger mix. I added too much. They were the best burgers I've ever made. Your burgers look
    deeee-licious, but you really have to cross the pickles 😜

      Soy is full of salt and umami so it must have been the most flavour intense burger , no doubt.

    Did you cook the patties medium? I have not been successful cooking a thick burger like that well done, without it become round.

      Yes I did cook it medium. If you want them well done, this method will also work because the onion and little bread crumb stops them from shrinking and losing as much of their juices , so they keep their shape better. I would also start them high and perhaps go down to a medium high to finish. I hope these suggestions help.

    So I have inherited a gas grill from my son but I’ve never used one before and haven’t made many burgers. Do you have any pointers on how to tell when the burgers are done? I have a meat thermometer but hate to poke holes in them.

      Ok if you don’t want to poke holes , with beef you have a window from medium to medium well. If you are using beef that was ground that day or just thawed. Just press gently and the meat should bounce back just slightly. The juices will run slightly. It’s about trying it a few times. I hope this helps

    That is actually how we make our burgers in Germany as well= we call them Frikadellen when they are pan fried.

    I guess I’m just old school. Looks like a great meatloaf burger. But for me a burger is just the meat, salt and pepper on the outside (garlic powder if I’m feeling naughty) of the patty with a well in the middle and char it on the BBQ. That’s it.

      I get you but meatloaf would be much more bread crumbs, milk, ( filler in general) .. Here the bread crumb is just enough to hold in the juices and grated onion to give the meat more depth of flavour. I knew there would be resistance here. I did make them as just salt and pepper, and they were not nearly as good. Thanks for watching

    So what is the fat percentage? 80-20?
    Tomato makes the bun soggy, I’d go with no tomato and bread n butter pickles, maybe some medium hot peppers in oil.

      Yes, it's about a 20 % fat. Of course you can add anything you like ... The burger is such a personal thing.

      Yes, you absolutely can. The only very important change is to make sure they are fully cooked . You have to reach 165 D F in the middle , unlike beef, which can be cooked rare. I hope this helps.

      Are the only "restaurant's" that are open where you live, fast food places with drive-throughs? Are the farmer's markets closed? Are the small local farmers in your area losing their asses because they can't sell anywhere?Does it seem like the whole "eat local" thing has been cut off at the knees?
      As an industry insider, what are your thoughts on what has been going on for the last 5 months? Is it scary or what?
      On the bright side, early duck and goose season starts on 1 September, as well as dove, and wild pig and beaver are always in season so it's almost time to get back into the woods and on the lakes. Hope it cools off some, because it's still pretty hot here. Hope you are well. Are you able to do another TV show?

    Just include ketchup to the meat mixture and you can use the same recipe for meatloaf.

      Not at all ... meat loaf is full of bread crumbs, milk etc. And salisbury steak, well that's a whole different think altogether. Just saying.
