    Tks. I also cooked after watching a video. Simple to prepare, but prwan stock is key to a delicious outcome.

      The stock is tedious to make. You need the pork brisket bone as well.

    The way this uncle fried the hokien mee is short cut version.
    Original fried hokien mee is in CHOMP CHOMP in Serangoon Garden Estate.
    Ah Hock is the stall owner and chef for Serangoon Garden Fried Hokien Mee.
    This stall inside CHOMP CHOMP was opened in the 70s' has a long history of originity.

      Why was Rochor mee name dropped? In my life as a kid I grew up never heard of Rochor mee only hokkien mee. I actually had a theory that a hawker back in the days were selling prawn noodles soup also by the way is known as hokkien mee. Somehow the hawker accidentally dropped the stock and was left wondering what to do, hence the birth of fried hokkien mee instead of prawn soup noodles.
      If you think about it, it makes more sense.

    I ate here few months back. Thot it was very good and delicious, and surprised there was no queue. If the stall should increase in sales, I think Greg, they should pay you some commission. Haha!

    This is the type of HKM with FAT white rice noodle. The FAT noodles do not absorb any of the flavor and this makes the operation cheaper as customers are eating the sauce from the surface of the noodle. Best kind of HKM is those who uses rice vermicelli and that absorbs the sauce... more expensive to operate but a wonderful produce -- ABC YU SHENG

    Silly questions: Do the pork lardons have the skin on, or off? While this store seems to use factory made lardons, do other hawkers make them when they render their pork lard/oil?

      skin off. most tend to render their own lard. depending on the wok size and portion.

      Yes. Pork oil = lard. Beef oil = tallow . Chicken/duck oil = schmaltz.

    I would have thought they will fry with the pork lard. I think one of the components were fish sauce.

      They added pork oil earlier but doesn't fry w pork lard so it can have the crispy texture

    Not too many hokkien noodles in there. That was mostly rice noodle. Cheaper.

      @@macrickfyi this is basic hygiene...so you mean you're okay if they just cleaned their poo without washing hands and use bare hands to grab food?
      Working in hawker centre doesn't mean they can be excused when it comes to hygiene purpose

      @@binbinfoodchannel7432 VERY true, about 27 years ago, I had Extremely severe stomach cramps/infection from Campylo bacter infection from hawker stall, in hind sight I shouldn't have bought cos I saw him wipe his nose/hands on his apron, stall also not look clean.

    Failure !!!! No bean sprout !! So Miserable amount of ingredient!!! So stingy !!! Gone case ! This stall will shut down sooner or later. Believe me.
