Fried Hokkien prawn mee was originally served with fresh cut red chillies in light soya sauce not with belachan or sambal or hae bee hiam! Over the years it has been adulterated! This stall noodles was much better when the present stall holder's father was hemming it! His father never cooked in such mass! He cooked in small batches therefore has more "wok hei" !
Have you tried the best or your money's 💰 refund fried Hokkien Noodles at Pasir Panjang Food Centre helmed by old lady chef & her 90s years old brother-in-law! Well that was in the 1980s - 1990s! Both are dead hawker Hero & Heroine Champions 🏆🏆! TQ
I don't understand hokkien mee enough to appreciate it. Firstly, noodle is soggy instead of al-dente; Secondly sauce is bland. Thirdly, most times the chili is too sweet and lacks fragrance; Fourthly, not enough wok hei. It's like eating a bowl of tasteless mush.
Not everything has to be aldente otherwise mashed potatoes and scambled eggs wouldnt exist. People do enjoy consistently soft food. Its funny how you say most times the chilli is too sweet. You don't like hokkien mee but you eat it more than a few times.
