Gd reviews bro! I had tried many hokkien mee stalls in my 48 years of life and none bears swee guan cos of the creaminess and rich flavour of the noodles as well as the very robust chilli sauce. Cant wait for ur next food episodes! Keep it up!

Kim's Famous Fried Hokkien Prawn Mee
i think you’re spot on! swee guan eat there is nicer, and come daily when dabao is better! Generally wet types dabao become even nicer as they have more time to fuse with the stock, hence the use of opeh leaf in the past! swee guan is definitely the top dog at the moment. come daily was prob the best 90’s hkm. i think they used to have a more delicious viscous stock in the old days and when dabao with opeh leaf, they were at the top of their game! thanks alderic for all your hard work and effort! this was definitely a must watch series! :)
thank for supporting the series! I actually tried to talk about opeh leaf in the series but none of the places that I visited offered it. feels weird to do an entire series about hkm without opel leaf.
Interesting take on eating it as takeaway.... just me but I have almost never preferred takeaway compared to on the spot
I think it works differently for different places. like for Swee Guan, I preferred having it there.

just some basic ones off lazada. I just bought the most sold one, cannot even remember the brand/model.
Oh nooooo how has this dude not tried Xie Kee Hokkien mee at Bukit Timah market and food centre. That Hokkien mee would’ve definitely won the one of one award because it’s the only one that uses flat yellow noodles and i don’t think I have seen any flat yellow noodles in this series yet.

Nah i don't subscribe to the dabao hokkien mee method. I find the noodles too mushy/overcooked as it continues the cooking process in its enclosed packaging. I just like the way it's served and that seems the most authentic - the way it's intended to be consumed (imo). dont flame me please, i like to eat food when it's freshly cooked and hot, this is just my belief and practice. But kudos to the effort over the past months, people don't get to see the hardships behind-the-scenes (i.e queuing, travelling etc.)
nah you definitely have a point. I think it works different for different places. like for Swee Guan, I liked it better when I was there. but Come Daily and Xiao Di arguably both tasted better when I bought it back.
fan of HKM and for all your listed HKM i have eaten non goes close to Swee Guan.
Apparently come daily is in 2nd place and alderic was having a hard time deciding. Might give it a try. But yea swee guan stays as the best HKM for me now.

@3:15 - Liking or disliking bean sprouts and spring onion is a personal preference. Has nothing to do with "world moving on". Personally I prefer my fried noodles with them.

never. because they have to remain anonymous. which I think is a double-edged sword. they can say whatever they want without justification or accountability.

Alderic!! Swee Guan's Hokkien Mee standard like different?? I see that your tabao one has thick beehoon but the "having here" one has no beehoon?? (or at least none I can see...) why the difference?
it might be my camera color issue. I think they serve yellow noodles with thin beehoon, the bean sprouts resembles the thick beehoon. not 100% sure though.

thank you! it's a combination of my own research, google ratings and comments/recommendations. quite unfortunate that I didn't manage to fit Kim into this series but I was getting quite sick of hokkien mee towards the end and that wouldn't be fair.

I am a huge fan of hokkien mee yet I have only tried TTL among those that you considered in this series. Not a bad outcome since I dont appreciate the alkaline taste

Alderic, I don't know what series you gonna do next. Let's say you ever do pasta in future, I tell you what is very rare in Singapore, which is a very aromatic plate of aglio olio (without using parmesan). So far, whole Singapore, only 2 places satisfy me lol...
I'm actually really thinking about pasta. May I have the 2 places please? heh.
@@Alderic. Just saying first that this is my personal taste and opinion and yours may vary. You can try Pasta Formaggio (Marina Square) and 49 Seats (The CentrePoint). For 49 Seats, try out the Smoked Duck Aglio Olio. Take note though, I am recommending purely based on Aglio Olio, not other flavours of pasta dishes.
Prawn noodles next? Haha but I guess you'll be sick of prawns already.

Swee Guan is good but got 1 really bad point. $8 plate really small. not enough for an adult. It's like just a snack.

Maybe 5 stars is like i love it so much i can eat like weekly
4 stars is i would travel across sg to eat it
3 stars would be if i’m around the area and craving i would order it
2 stars is average and much to be sought after
1 star is needs much more improvement

i have a HUGE black horse in the best hokkien mee race. it's not the best, not the most authentic too, BUT, i love it so much, it's changi village hokkien mee at upper thompson, idk about the other branches but this branch kept me happy for the 2 years i stayed at upper thompson

Great series and enjoy your content more and more! Watch it every week with my girlfriend now. I think bak chor mee is a good option for you to explore next, it's an extremely complex dish with a lot of different elements and I think as shown in this series you do a great job at breaking down your thoughts on the various different flavours and components in a dish and how they interact with each other. Also great to see brighter lights shone on hawker food by local content creators!
