In this video I show you how to breakdown a whole halibut. this technique really applies to any flat fish big or small. The reason why I am making this video and my goal is to teach the younger generation of chefs how to properly filet and portion. There are a lot of ways to fillet, this is how I like to do it.

About 60% depending on size of halibut I prefer 40-45 lbs’s
