The second one is a winner. Did you notice any difference if you mounted the battery on the left side from the right, especially considering the direction of the propeller and the torque of the motor?

Nice video! How do you usually deal rolling issue? a lot free flight aircrafts don't even have adjustable rudder and ailerons, but they are not rolling.
You can't get away from the circuit but you can get away from the programming. If instead of the micro processor you use a 555 timer chip to drive a transistor that can handle the motor current. To keep it light you can eliminate the circuit board and solder the electronic parts together and glue them right to the fuselage. A tiny trimmer resistor can be used to set the on time of the circuit.
