I have been making these for years. They work great for other uses as well. Cooked without cutting, then folded over immediately before they cool creates TACOS! If cooked for less time so they aren’t as crunchy, they can be used as wraps. Freshly chopped chives are good flavorings. I like to use caraway seeds in mine (added to dough before cooking) and the result is a great substitute for “rye” bread for crackers. If cooked just to the softly-crunchy but still wrap-able point the rye flavored ones make for a crunchy tuna salad wrap, or filled with corned beef and sauerkraut for a mock “Reuben sandwich” , all great for low carb lifestyles. :)

This looked so appetizing but I only had coconut flour and some cheese singles, but I came up with a recipe based on yours that worked really well! I melted a couple of cheese slices in about 100-150 ml of boiled water (eyeballed it) in a bowl, added some nutritional yeast, salt and garlic powder, about 4 or 5 tsp of coconut flour, then a generous pinch of fine psilium fiber (helps bind). Spread and sliced squares on parchment paper, microwaved for 3 minutes with loosely folded parchment underneath (previous attempt caused moisture on the plate) then pealed off the paper and put in the toaster oven upside down until golden. Perfect crackers! Will try the almond version as soon as I buy some.

Finally a simple cracker recipe that’s crispy AND tastes great! Microwave works good for a quick snack. I used the oven to make larger batches with varying thickness and sizes, all @ 350 with varying times until golden brown. Thank you for this awesome recipe!
I’ve purchased a food processor so I can make these for my son who is on a low carb/no carb diet. He suggested using taco seasoning or dry salad dressing mix. Thanks for the recipe, it looks really good!

Whoa! I just made these and I ate them ALL! They taste exactly like Cheez-its! I didn't have fresh parmesan cheese, so I used the Kraft kind along with 2 tablespoons of fresh shredded asiago. After they came out of the microwave I sprinkled Kernel Season white cheddar popcorn salt on them WOW! So flaky and delicious!!
Katie Irish, I won't repeat my comment, but take a look. I just wanted to add, that I am allergic to that seasoning that you speak of, it gived me a terrible headache, but I love it! I have like 4 flavors in my cabinet. I've got to try it.🤫 I will go and get some Aleve, or take Tylenol. I know, it's a shame, but I'm shameless, and will be with a headache.😊

I then mashed a ripe avocado, salt and cilantro in a bowl to spread on the "crackers". I'm in pig heaven, without being a piggy! THANK YOU!!!!

I used a little garlic powder, onion powder, paprika and a dash of seasoned salt. I made a double batch right away since I knew I would be eating them over the next few days. I made this today and wow... super easy and delicious... has a crackers crunch and snap... amazing 🤩 I made sure it’s not overly thinned out using rolling pin ... I made sure it’s only max 2 mins in the microwave... I didn’t spray with oil... just made sure I seasoned and removed from the plate and sitting on a rack for 10 minutes before cutting into pieces ... amazingly delicious ...
How fun are these! OK so no I don’t have a microwave but I was able to make them in a nonstick pan and they weren’t so much like crackers but like a thin bread but they were extremely tasty! I will totally be making these again and I agree with the person that said to make it for a pizza crust this would be an excellent thin pizza crust! I just made these. I added the spices before baking. I did 65 seconds x2 for my 1000 watt microwave. These turned out great and I will be making again, and again!!
I made these tonight, did everything you did plus my additions My additions....turmeric...hot sauce....black pepper.....trigon.....and pinch of basil I baked it in a pre heated cast iron skillet @ 375 for 7 minutes (for people who don’t use micro energy don’t worry about those Jackasses abusing your intelligence cause you ask a question about baking these lovely snacks) depending on your heat in the oven, keep an eye on it, it shouldn’t be more than 7 minutes to crisp up. Now with all of that being said , if you smoke weed or have edibles one batch ain’t gonna be enough Eat responsibly

Hey Joe, thank you so much for an awesome recipe. I just made these and they turned out perfect. I didn't use food processor, I simply mixed with hands. Also after rolling it, I added oregano and black sesame seeds on top which were sticked perfectly after they came out from the microwave.
Wow, these are amazing, I swapped out 1 teaspoon of water with vinegar and I also added flaxseed powder and garlic, too die for, simple, easy and quick, cheers

I Did use the tortilla maker it worked awesome! I had to add a little extra water , I didn’t have to add butter on top I think because of extra water . I sprinkled Nacho Cheddar on top before cooking. Mine are round crackers and taste awesome!

How might I sub coconut flour for the almond flour? Sorry not a fave of the flavor of almonds or almond flour.

For those that don’t have a microwave I used my air fryer for 4.5 minutes at 350 degrees
Air fryer didnt blow the dough around ?
No. But air fryers may vary so I would start checking at 3 minutes. But it worked great.
Did u use the deep bake basket or a shallow pan for the air fryer?

I made this today and wow... super easy and delicious... has a crackers crunch and snap... amazing 🤩
I made sure it’s not overly thinned out using rolling pin ...
I made sure it’s only max 2 mins in the microwave...
I didn’t spray with oil... just made sure I seasoned and removed from the plate and sitting on a rack for 10 minutes before cutting into pieces ...

It’s a process called docking, it prevents them from bubbling up and also can help with cooking completely through
How fun are these! OK so no I don’t have a microwave but I was able to make them in a nonstick pan and they weren’t so much like crackers but like a thin bread but they were extremely tasty! I will totally be making these again and I agree with the person that said to make it for a pizza crust this would be an excellent thin pizza crust! The options are endless and it was so easy thank you thank you thank you! This would be great to try on my friends that don’t like Keto!God bless you!
Add the seasoning to the dough after you roll it out, before you cook it, it won’t fall off 🤓

I've only just come across this recipe and OMG. The best keto crackers I have had. I have made them from other recipes and shop bought them but I have to say yours are right on the money. Your tortilla chips are great too and so simple to make.
I used 1/4 teaspoon of xantham gum instead of the cheese. The texture reminded me of the chicken in a biskit crackers. Will be making again!

Oh wow! These are the bomb! I made these this afternoon and they came out perfect. I FINALLY have a real Keto friendly “cracker” which I have been missing so much. Both my wife and daughter (who are not on Keto) absolutely loved them too! Thank you for posting this recipe!

Okay, I don't know if I'm lazy; but, I WAS limited for time making these today. Haha I did not even measure and did not score or put holes in. I literally added almond flour and grated, canned Kraft parmesan cheese to a bowl until it "looked like enough", mixed it with a spoon and added water until it got "doughy". I did roll it out between 2 sheets of parchment paper and sprinkled a combo of Himalayan salt, hemp seeds, and flax seeds. Then tossed it, as is, into the oven at 350 for about 20 minutes. Once the sheet was golden brown I took it out to cool and just broke it up like bark. My sister AND the dog approved, both of which are picky eaters. I then mashed a ripe avocado, salt and cilantro in a bowl to spread on the "crackers". I'm in pig heaven, without being a piggy!
@@michelleshaker7806 btw if you want it more like bread or a soft pizza crust, just make it a little thicker 😁 some areas were like that accidentally and still delicious!

I made a small batch of these today.....delicious! I topped them before baking with salt, everything but and garlic powder. I baked mine in the toaster oven and they turned out great. Going to try them in the microwave soon. Thanks.

I just made these. I added the spices before baking. I did 65 seconds x2 for my 1000 watt microwave. These turned out great and I will be making again, and again!!
I made these tonight, did everything you did plus my additions
My additions....turmeric...hot sauce....black pepper.....trigon.....and pinch of basil
I baked it in a pre heated cast iron skillet @ 375 for 7 minutes (for people who don’t use micro energy don’t worry about those Jackasses abusing your intelligence cause you ask a question about baking these lovely snacks) depending on your heat in the oven, keep an eye on it, it shouldn’t be more than 7 minutes to crisp up. Now with all of that being said , if you smoke weed or have edibles one batch ain’t gonna be enough

Using a caste iron skillet was my thought since that is the way people make tortillas ... or used to.

Hey Joe, thank you so much for an awesome recipe. I just made these and they turned out perfect. I didn't use food processor, I simply mixed with hands. Also after rolling it, I added oregano and black sesame seeds on top which were sticked perfectly after they came out from the microwave.
Wow, these are amazing, I swapped out 1 teaspoon of water with vinegar and I also added flaxseed powder and garlic, too die for, simple, easy and quick, cheers

I Did use the tortilla maker it worked awesome! I had to add a little extra water , I didn’t have to add butter on top I think because of extra water . I sprinkled Nacho Cheddar on top before cooking. Mine are round crackers and taste awesome!

I seasoned them afterwards and it wouldn't stick. The next badge I seasoned before sticking it in the microwave and it worked much better. 👍🏼😉
