The BEST Chocolate Cherry Cake

    Cherry Sauce
    1 1/2 cups sweet cherries, pitted
    1/4 cup granulated sugar
    1 tbsp lemon juice
    1/2 cup water
    1 tbsp cornstarch
    Ganache Frosting
    1/4 cup semi-sweet chocolate chips
    1 cup hot heavy cream
    400 ml heavy whipping cream
    1 tsp vanilla extract
    Cake Batter
    5 eggs
    150g sugar
    120g flour
    40g cocoa powder
    1 tsp baking powder
    1/4 tsp salt
    40ml heavy cream
    Instructions
    Cherry Sauce
    1. Prepare Cherries: If using fresh cherries, pit them. If using frozen cherries, ensure they are thawed.
    2. Cook Sauce: In a medium saucepan, combine the cherries, sugar, lemon juice, and water. Cook over medium heat until the mixture starts to simmer.
    3. Thicken Sauce: Dissolve the cornstarch in a small amount of water to make a slurry. Add this to the cherry mixture and stir continuously until the sauce thickens. Remove from heat and let it cool.
    Ganache Frosting
    1. Melt Chocolate: Place the chocolate chips in a heatproof bowl.
    2. Combine Cream and Chocolate: Pour the hot heavy cream over the chocolate chips and let it sit for a few minutes to melt the chocolate.
    3. Mix Ganache: Stir the mixture until smooth and glossy. Allow it to cool slightly.
    4. Whip Cream: In a separate bowl, whip the heavy whipping cream with the vanilla extract until soft peaks form.
    5. Fold Ganache: Gently fold the whipped cream into the ganache until well combined. Refrigerate until needed.
    Cake Batter
    1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
    2. Beat Eggs and Sugar: In a large bowl, beat the eggs and sugar together until the mixture is pale and fluffy.
    3. Combine Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
    4. Fold Dry Ingredients: Gradually fold the dry ingredients into the egg mixture until just combined.
    5. Bake Cake: Pour the batter into the prepared cake pan and bake for about 40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
    Assembly
    1. Layer Cake: Once the cake is cooled, you can cut it into layers if desired. Damp each layer with heavy cream with a brush.
    2. Add Cherry Sauce: Spread a layer of cherry sauce between each layer of cake.
    3. Frost Cake: Frost the entire cake with the ganache frosting, spreading it evenly over the top and sides of the cake.
    4. Decorate: Optionally, garnish the cake with additional cherries or chocolate shavings.
