Eggplant & Chicken Salad Recipe

  • Ingredients:
    2-3 eggplants
    300g mushrooms (champignons or your choice)
    100g walnuts
    1 onion
    Handful of parsley
    300g boiled chicken breast
    2 cloves of garlic
    1 tbsp mayonnaise
    1 tbsp sour cream
    Olive oil for frying
    Salt and pepper to taste
    Instructions:
    1. Prepare the Eggplants:
    Slice the eggplants thinly (each eggplant should yield about 6-8 slices).
    To remove bitterness, soak in salted water for 15-20 minutes, then rinse and pat dry.
    Fry in olive oil until golden, then place on napkins to absorb excess oil.
    2. Prepare the Chicken & Mushroom Mixture:
    Boil the chicken breast in advance, then shred or dice it into small pieces.
    Chop the onion and mushrooms.
    Sauté the onion in olive oil until soft, then add the mushrooms, salt and pepper for taste and cook until tender.
    Combine the sautéed mushrooms and onions with the cooked chicken. Add chopped parsley, walnuts, mayonnaise and sour cream and mix well.
    3. Serving & Decoration:
    Assemble as shown in the video.
    Garnish with fresh parsley, walnuts, and pomegranate seeds.
