  • I have always had a special place in my heart for a Reuben sandwich and was inspired to make this healthy plant-based Reuben version after having a vegan sandwich in a local cafe. I've gone all out with the homemade elements layering my recipes for gluten-free buckwheat bread, sauerkraut, and thousand island dressing with the smokey salted goodness of the tempeh and creamy cheese sauce. This sandwich brings the flavors you crave and makes for a truly healthy Reuben!

    You nailed it, Jill! My daughter who is not plant=based took a bite, raised her eyebrows and said, "It works" This is an easy recipe and it really hits the spot!! Especially on a cold, damp winter night! I ate two sandwiches!! Thank you, Jill! You are my number one go-to plant based chef!!!😍

    Hi Jill. Usually, a Ruben is made with thin sliced meats. I am wondering if you could make a tempeh based seitan with the same flavorings and then slice it very thin to have the same texture. Thank you so much for your wonderful recipes ! They often are the centerpieces of my meals !!! Take care.

    A WFPB Reuben!!! I LOVE Reubens!! My daughter is visiting and we will have these tonight for dinner!!!! Can't wait! As luck will have it, I made Jill's buckwheat bread the same morning this posted! I'm going to toast it and lightly toast caraway seeds to put on the sandwich. Another super healthy recipe! Imagine having this with the purple carrot soup! Microbiota Heaven!!!! Thank you, Jill!!! We love you! PS: you inspired me to start making my own saurkraut again!🙂❤

    I never had a Reuben sandwich, but this sounds tasty, and I have been trying to use tempeh lately, since it's recommended in How Not to Age. I used to think I didn't like tempeh, but I learned that if I steam it for a couple minutes before marinating, it removes that funky bitter flavor I didn't like before.
    By the way, I just saw you in PlantPure Communities film From Food to Freedom; at 1:09:58 you were on the screen briefly as one of the immersion subjects, Dennis, was watching you at home 6 months later.

    Looks great--love this is plant-based as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy and the igf-1 and pesticides in meat. Thanks so much for sharing

      Tofu would be an equally great replacement. If you want to try veggies, I think the sky's really the limit. Tomato slices, maybe even eggplant?
