    Pumpkin Pie Spice is a USA thing. We don't have it in Australia. But it's easy to make with 3 tbsp cinnamon and 2 tsp each of ginger, cloves, allspice and nutmeg.

      I'm in USA but make my own to save money and because I think it tastes better. In addition to the above, I also add cardamom to mine, as well as a pinch of pepper. My proportions are different as well, a little less of some of the spices, but the difference in taste is probably negligible.

    I made these to bring to my mom's 90th birthday!! Not only are these delicious (you gotta try them!), the texture is amazing - you have chewy brownie and creamy pumpkin with a lovely smooth chocolate frosting, they are healthy (chickpeas!), and beautiful with the three layers. Looks like something you would buy in an expensive pastry store! BRAVO, Jill!!! These are coming to Thanksgiving along with your apple pie!! So grateful for all your hard work creating these awesome, gastronomical WFPB delights!!!❤❤❤

    Allergy Hack: If you cannot eat Pumpkin, you can use Applesauce or any Fruit puree ( 1:1 ) in the same amount.

    The only thing I noticed when baking with dates is, it is never very sweet after it is baked. It only adds a hint of sweetness compared t real sugar or even maple sugar.

    Question about measuring dates….. Do you press the dates down in the measuring cup to eliminate the spaces between the dates or do you just gently put them on top of one another in the measuring cup?
    Hope my question makes sense.

      Kind of between the two. I don’t press them down solid but just slightly

    I dunno if you'd see this or not but i have a suggestion to make..
    Try throwing that pumpkin seed (washed) into the blender with some water and see the magic happen...after straining you'd get yourself an amazingly creamy pumpkin milk that can even tofu..

    Just emailed to get a copy of the recipe book mailed out to me in Australia. Book was $35 USD and mailing was $55 USD total of $90 USD.       Unfortunately international shipping rates are being quoted to our publisher this high and there is nothing we can do about. We do offer the kindle, Apple Books, and PDF version as well. Global distribution of physical books has gotten unbelievable expensive since the pandemic and they continue to raise prices with no end in site. Shipping for the book within the US is $7.

    This sounds great and I know it will be good but making this sweeten with so many dates make it expensive to make. In my area dates are expensive.

      If you're a Costco member, a 2.5 bag of (pitted!) deglet noor dates is just under $7-- at least it is at the Pentagon City warehouse.

    You probably have answered this question before, but can I use medjool dates instead of daglet dates. I can find medjools more readily. The brownies look delectable!

      Yes, but the ratio would be 1 medjool for every 2 deglet dates as the medjool tends to be much sweeter date. 👍

      I haven’t tried using maple syrup, sorry. Because it is a liquid other things would have to be adjusted or it may not set properly
