I really liked Byzantium: the Surprising Life of a Medieval Empire by Judith Herrin, which offered a good overview of the period. I've got my eyes on The New Roman Empire by Anthony Kaldellis - it's coming out next year I think, and is a little more in-depth (it's certainly longer!)
