    I think the Bison Brisket would do really well with a 2 to 3 hour smoke followed by a 24 hour 155 degree sous vide bath.

    How funny Miss Ninja said That. I was given a small chunk of bison and decided to slice it thin and marinate it for jerky. Probably the best, whole muscle jerky I've made.

    I’ve said it to you before man, but you gotta try BEEFALO, an actual hybrid cattle (5/8 beef breed, 3/8 bison breed), not mixed together. You can find it all over the country, and it’s INCREDIBLE!! Gotta do a video, you won’t regret it.

    Great Video! I think The pricing mentioned is an important part. With the 4th of July coming up, maybe a good video would be the best cheap meats to cook up the holiday, or tips for finding good deals

      Hi James, this is a common assumption as most people have the image of a 2000 lb bison bull that is probably 5+ years old. Our bison are 2 years old and just under 1000 lbs each for live weight. The carcass yields about 6 lbs of brisket, then we cut it into 3 lbs portion cuts.

    Now, let me ask you what you think…you mention that the bison is not as tender. Do you think that a combo smoke/sous vide for the bison brisket maybe make it more tender?

      The bison was not as tender as a reg brisket can get but it wasn't tough at all, I see many asking about mixing it with sous vide and I think it makes a lot of sense. If I get my hands on another bison brisket I'll experiment with sous vide! 😀

      Bison is great! Many people are with the outdated idea of bison being next to extinction but nothing farthest from the truth. There are entire farms dedicated to grow bison in the US. The meat is healthier and the prices not too bad compared to the prices in my nearest supermarkets… It taste amazing and man it sure is delicious! 😀

    Next time brine the bison. I do bison ribs I usually rub it down with oil and let sit for 2 hours before I add rub

      Eso es algo que me tenia nervioso. Yo creoq ue la grasa lo ayudo mucho y no tiene que ser de bison, cualquier otro tallow como beef o manteca de cerdo haria el mismo efecto... mmmm manteca de cerdo! WOW!

    Ninja, what do you attribute the strong jerky flavor to? The rub was the same. The smoke was side by side. Of course, the meat was from bison versus beef, but could it have been the tallow? I would like to buy some bison tallow and try it. Thank you for this video as my wife and I put it on our living room screen and enjoyed it. The screaming you guys do was AMAZING to watch! ❤️

    I need a smoker! Still don't know which one to get. Pellet or the masterbuilt charcoal/wood electric one. Mrs Ninja guilted me into commenting. Lol. But seriously I need to figure this out.

      If you are looking for simplicity, pellet is the way yo go, the masterbuild will make you work more but it produce amazing flavors! both are awesome in their own way! 😀

      It is a set it and forget it… if you are not making ling cooks! I found that on cooks over 8 hours you will need to refill the charcoal. Besides that is a great grill!

      Thanks for the great question Earnest. A whole bison brisket for our 100% grassfed bison is about 6 lbs. This cut is 3 lbs, so we make about two per carcass.

    This is literal torture to watch as soon as you wake up and are already hungry to begin with!!
    but I'll have to try one, only bison I've had was a ribeye, & yes the flavor is pretty intense, got another 36oz bone in one in the deep freezer too that I kinda wanna eat 😂

      mmm that will definetaly help but not too much, you don't want to change those bison flavors too much! It is the best part of this meat and the one thing that makes it unique and delicious!

    Why is the beef brisket bigger than bison : this seesm stupid since the bison is generally at least 1.25 time bigger and no one is talking about it, you get a buffalo brisket is about 5lbs while the beef is 16 ish

      I've been after bison picanha too and it is very difficult to find... BUT thank brisket man! OMG! It was amazing!
