    We trimmed off the silver skin and fat that wouldn’t render.
    Seasoned with Big Sam’s Season All townsendspice.com/shop/detail...
    Set our Blaze Kamado www.bbqguys.com/blaze-outdoor... to 250 degrees, using Royal Oak Lump Charcoal www.royaloak.com/
    Wrapped in butcher paper when we got the color we liked.
    Applied smoked beef tallow
    South Chicago Packing Wagyu Beef Tallow, 42 Ounces, Paleo-friendly, Keto-friendly, 100% Pure Wagyu www.amazon.com/dp/B0881XTCR3/...
    Let brisket reach an internal temp of about 206.
    Slice and serve!

    Oh my goodness... that just looks incredible! I seem to recall you have to be a little careful with bison because it can break down kinda funny if overcooked, but I imagine the low-slow method of a traditional smoke plus that excellent tallow really helps side step all those issues. Beautifully done! If I can get my hands on a brisket like this, I want to give it a try!

      Thank you! It was very good! You’re correct, if overcooked it can be dry, mainly due to the leaner nature of bison. You should order one from my friends at buysomebison.com/

    I’ve got a bison brisket waiting in my freezer. Definitely gonna take some tips from your video. You mentioned this was your first bison brisket. Same for me. Is there anything you would have done differently? Any idea what went wrong with the bark? Thanks!

      Cook it! The bark just didn’t set the way I wanted it to. My theory is that i spritzed too often, thus prohibiting bark formation. I was worried about it drying out. Next time I’d let the bark set then begin spritz.

    Got my hands on 2 bison briskets. I’ll be thrilled if they come anywhere half as nice as yours!! How long of a cook was it?

      Congratulations! They cooked more quickly than a regular brisket. I can’t remember exact cook time but if you just keep an eye on it and follow the video, it will turn out great!

      @@CasksnQue so for the first time we bought a 1/4 beefalo. They are farm raised bison bred with a cow. I got the brisket from it. Would you assume cooking it like you’ve done with the bison brisket. It appears to be much leaner than beef brisket but a little more fatty/ marbling. Thanks for taking the time to read and reply!!!

      @rickolack1635 I’ve never cooked a beefalo brisket. Would be interesting for sure. I’d approach it like a bison brisket (er on the side of caution). Monitor the temps and pay attention to the way it looks. If it gets too charred looking, then sprits that area. Hope that helps!
