It's a thing people do with a lot of meats, usually only for two or three days though and not a whole week (though with steaks they can do it for weeks or even months). The bacteria changes the flavor and texture of the food in the same way it does with cheeses that are aged the same way, or with alcohol that has been aged.

To me it solidified what Mariko was saying, John thought a human life is leagues above some bird so why wouldn't they hold it in higher regard, and she said, no bro, an earthquake can come out of nowhere kill a lord and end a war. Also she said the gardner died "for the greater good" and how Johns word "gave him (the bird) meaning. Naw, I'm tired of this slander. Anyone who only pours milk or cereal one way is silly, cuz different cereals behave differently. Controversial take: if the cereal stays where it is when you add milk, you add milk second, and eat it quick so it doesn't get soggy. If it floats, put the milk in first, put a just a little bit on top, dunk it with the spoon as you scoop, keep the box with you and add a bit more over time if you want to enjoy it, or just be done and drink any leftover milk from the bowl like you're challenging Buntaro and be done with it.
