He did have a team behind him, even he says he isnt specialized in Asian cuisines.
It is notable that in the one episode of Kitchen Nightmares UK that featured Indian food he never complained about the food itself (the chefs were proper Indian chefs). The one US episode where he helps a Japanese restaurant, he improves the food simply by re-inserting the Japanese chef!

When I was watching this I kind of thought wow the level of dilapidation in the video and the poverty stricken faces of the youth made me sad, inspired, but sad. As I chuckled through the mishaps and the broken English I began to think about the food being prepared and slowly began to grasp at how large the portions were made. Towards the end it hit me, people putting this much dedication into cooking and making large quantities in a fairly low income country it dawned on me that we were seeing the work of a soup kitchen. I didn’t think much about the rampant youthly chatter and when I heard kids running to eat I literally broke down. This is truly heartbreaking and endearing at the same time. Strong woman who are leading the charge towards perfection and instilling discipline while performing charitable work is absolutely amazing. Thank you Mr. Ramsay for shining light on this small kitchen, I hope your trip there helped fund help to this city and its people. 🙏❤️

I have so much respect for Chef Ramsay. He reminds me so much of my own father. He used to be an elementary/high school band teacher. He would spot talent from a mile away and push his students to reach farther and give them opportunities that they normally wouldn't have gotten. He taught them to appreciate and respect music, just as Chef Ramsay drills appreciation and respect for food to those that he encounters. He is giving this boy an opportunity of a lifetime, something that he will never forget and he will use in the future to grow.

I love how even the best chef in the world still has a lot to learn and actively tries to learn the things he doesn't know.

This video is a great example of why Gordon is successful. Always learning, acknowledging when you don't know what youre doing and when you mess up you move on and learn from it.

I adore Lina for creating this organization, correct me if I am wrong about her being the founder. Feeding street kids and teaching them how to cook so that they can survive by having a skill set are amazingly wonderful.
