one trick from Bulgarian housewife: just before it's ready pour some lemonade or normal soda (can also be beer or whatever fuzzy drink u have at home), not much so it won't get soggy. this will give a little sweetness in contrast with the cheese and yogurt 😁 greetings from Bulgaria! ❤
Outstanding recipe 🎉 have tried it several times. You can add a little flour if the filling is runny and if you are not using thick yoghurt. One great shortcut to speed things up to avoid handling the filo and the filo from drying up is to open the box and leave the filo in a stack as it comes out of the box and only fill and use the top two layers at a time. Go down the stack two filo layers at a time. Just avoid getting the edges of the stack wet so you can easily separate the layers.

I really want to try making this for my bulgarian coworker. Would feta cheese work for this? I couldn't find any other white brined cheese in the UK, but I'll see if any of the european markets might have it.

You could use feta cheese if you can't find Bulgarian cheese. It isn't as briny and strong in flavour but also works.

Hello! You can use feta cheese too or cottage cheese, but with cottage will be super different like a taste and texture!
Here in Bosnia, we use white cheese that is like cottage cheese. Feta is too salty.
