    Hi Jill, I live in Ajijic (Ah-hee-heek) Mexico, and the vegan community was having our holiday potluck. I made this dish and it was delicious! I forwarded your video to 5 people that just had to have the recipe. Unfortunately I couldn't get the different varieties of sweet potatoes, but no biggie, because this recipe was a big hit!     I love sweet potatoes, and this dish looks so yummy and beautiful.
    Jill, another thing I appreciate about your weekly videos (besides that the ones I have tried are delicious) is that they are short and fulfill your purpose. You get to the point and show us what we want to see in 10-20 minutes--not an hour or longer. Thank you soooo much!

    Hi Jill, I had a small amount of this sweet potato casserole left over, so I made sweet potato taquitos, in the air fryer, and used a Cashew cream for dipping sauce. It was delicious!😋 Thanks again for all you do! Happy New Year to you and your family.🥳

    Love this! I bought a mixed box of colored sweet potatoes at the State farmer's market a couple of weeks ago! This is the perfect recipe!

    Can we use some Braggs ACV in place of the white wine vinegar? Will it affect the taste too much? I would think it would still be really good. Great recipe. Thank you

    I wanted to make this for Thanksgiving but could not find the purple or white sweet potatoes! I'll have to an asian store to make them for Christmas. BUT, I made Jill's pumpkin spice chocolate brownies (3rd time) and her apple pie which is so tasty for our Thanksgiving. I'm so grateful to you, Jill, for these delicious, healthy recipes!     After stacking the sweet potatoes, what did you do with them? Did you cook, steam or baked them. I'm new to veganism and nit used to your type of cooking. My culture and how we cook is different so pls spell everything out. I'm from Nigeria but learning European vegan dishes. Thanks for your response.

    Hi Jill, I’m trying to decide if I should go plant based. How long have you been plant based? I’m almost 40 and have very stubborn fat. Hoping it could help me lose weight!

      We actually went plant-based at 40 (have been for about 10 years now), but it is always a great time to make the switch. A whole food plant-based diet is healthy for myriad reasons. Removing refined oil and sugar from your diet is also a great way to lose weight along with daily walking.     Thx for the beautiful recipe! My little mandoline's thickest setting is .15 inches (less than a quarter inch). WIll that be too thin? Or can I adjust cooking times? Thx!

    Jill, I just love your cooking shows and have tried many of your recipes. I was curious though to hear that you don't use aluminium foil any more. Can you tell us why? Because I myself have wondered wether it would have the same impact as if you were cooking with aluminium pots. Your thoughts pls. Thank you.

      A lot of the plant-based doctors are saying not to use aluminum--research is suggesting that it could be a real problem.
      (for what it's worth: sometimes I'll put parchment paper under the remaining foil I have if I can't find a lid to go over the casserole dish)
