INGREDIENTS:
*For the Pineapple Cake:
500 grams all purpose flour
16 grams baking powder
a pinch of salt
4 large eggs
360 grams white sugar
120 grams any flavorless oil
400 grams pineapple juice
350 grams pineapple chunks
2 tsp vanilla extract
*For the frosting:
250 grams cream cheese (I used mascarpone cheese here)
500 ml sweetened whipping cream (chilled)
1 tsp vanilla extract
Pineapple juice to wet the cake before frosting
*For the decorations:
Chocolate covered strawberries
Assorted chocolates
You can decorate your cake however you want.
Baking pan used: 30 x 30 cm
Hence: The cake tastes better when you make it the day before any occasion.
