- Caldo de Res is one of my favorite soups. This recipe is the way I like to make it. You can add the veggies of your choice and chayote is a traditional veggie I grew up having in beef caldo. If you can find it, use it in this recipe.
INGREDIENTS
3 lbs Beef Shank
6 to 7 quarts water
2 cups beef broth or stock (or water)
salt to taste
5 cloves of garlic
1 medium onion
5 small to medium carrots
3 celery sticks
3 to 4 potatoes
head of cabbage
3 Mexican squash or zucchini
2 fresh ears of corn
8 quart stock pot w / lid

My late mother used to make this yummy soup. On cold winter days I couldn't wait to get home from school cuz I knew there would be fresh made tortillas & this soup! I never got it quite like mom did but I'll try again using this recipe. Thanks!
Same! Way my grandma use to make it was that she would add some lemon into the broth near the end, but what made it so awesome was that she would start making it at 6 am and its be done by 4pm. it was and still remains to be the best soup I would ever have in the winter. Trying to learn how to make it myself.

Making this soup today on a raining day in Michigan! Ever since moving away from California I had to make my own favorite Mexican dishes. I sure miss driving down the block to my favorite Mexican restaurant who made it. But, I think I for sure I enjoy mine more!
My mom boils the meat too but she adds one whole onion and 2 garlic balls and boils the meat with them. She says it adds flavor to the meat

My mom used beef short rib with the hueso. I remember as a kid I was reluctant to eat Cocido de Res, but I now I just love it!
So good, just like mom made it. Dad and now I would cut up chilé serrano and fresh avocado, cooked arroz and put it in the caldo with some lemon or lime. YUM!

@@Opochtli it has a very light and sweet flavor, that is similar to the flavor of cabbage, but milder. You might know the vegetable by another name like pataste or guisquil.

Well Mija, I made this caldo and it was EXCELLENT! I enjoy your videos, they are so well done and accurate. I have now made your whole wheat tortillas, tamales, empanadas, Charro beans and this wonderful caldo. I loved the WW tortillas and stretched them out for burrito size tortillas. I really like that you make smaller size recipes. I even made the empanadas with WW flour and they were the best I ever made. I eat a lot more whole grains these days due to a recent diagnosis of diabetes. I was really missing fresh tortillas until I found your recipe. ¡Que sabroso! Got food poisoning 2 days ago. Since I move away from my abuela I have to make caldo alone. I always crave this when Im sick and now that I can eat again Im boiling the meat now! Found some frozen salsa from the last time I visited my abuela. Love adding her salsa to bites of caldo

I personally like to use the small red potatoes. Another tip to make it very tastful is adding cilantro and cumin while cooking.
Excellent tutorial! Thank you! I like to soak the meat in a cold brine solution for 1-2 hours. This really helps get rid of the blood, thus minimize the "foam and scum" later.

Looks good! I add garbanzo beans and fresh cilantro while it cooks. But I add the veggies in different times. The softer veggies at the end. The cabbage turned out mushy

I enjoy the clarity of your video and instructions. I always watch your videos.
This is similar to a Filipino recipe that i really enjoy. It’s called “bulalo”. The only difference is they don’t use celery, squash, and garlic, and they use fish sauce for flavoring. Cabbage is used but sometimes they use bok choy too. Some of them sear the meat prior to boiling it, giving it a nice smokey flavor.

You make your caldo like I do, except that I like to eat it with flour tortillas and I don’t add lime to my caldo or tortilla. (Although I don’t think you added lime to your caldo.) Another thing I enjoy about your videos is how you explain things for those who are new to cooking. And I love the background music as well! Thanks again! 😋

Baby potatoes skin on is much easier to cook and stays whole also skin on carrots. I would add whole garlic head since the beginning. I like to add salt and cilantro 10 min before turning off flame. I like that you skimmed the caldo that's exactly what I do to any boiled meat water.

Made this tonight and was awesome!!! Was my wifes 1st time trying caldo de rez, her n the kids loved it! I had some years ago with beef ribs and was really good so I used some beef riblets and came out great! Thanks!

I made this today and it was delicious! The weather is in the 80’s, but the calendar says November. The calendar won. Thank you for your recipes. Last week I made your carne guisada, something I don’t eat (don’t like gravies or sauces) and my family loved it! I will be making both these dishes again.
