      You should watch Rick Bayless and Pati Jinich. She cooks just like they do in towns like michoacan and other cities deep in the heart of Mexico

    In the Philippines we have the same called Nilaga. Very simple using the same vegetables but without the corn. The seasoning has two different styles. For the plain and easy is with Bay leaf, salt, Pepper, to taste, and cabbage and potato. The sour version is using the same vegetables or with Bak Choy or Chinese cabbage but with Tamarind soup base or the Tamarind pods called Sampaloc. I think the Spanish settlers from Mexico came to the Philippines and introduced the recipe. The Philippines didn't have cows or cattle before the Spanish colonizers brought them over from Spain and Mexico. The Carabao or water buffalo was used as a working animal to plow the rice fields. But I love cooking this boiled beef recipe. I think this was a very common recipe in all of Europe with boiled beef soup.😋😋😋😋😋

      I would totally try that. It sounds delicious. I’m a little scared of that one you guys called caldereta though. The liver paste I hear you guys put in it throws me off. Saludos to our Filipino cousins. Some of us still remember.

    My wife is from Honduras and makes this soup and adds yucca as well. My favorite soup of all time 😍 and yes beef shank is the best for this recipe.

    My wife uses beef shank and neck bones in her soup ,but she always browns the beef before she adds the water. She is not Hispanic but loves to cook mexican meals for me. My family lives in Mission, Texas. I live up north In illinois. Love your Chennai!

    The soup is one of My favorite soups! Pairing it with a good salsa is a must! My mom makes an oil based salsa with toasted dry chilies, and it's incredible!

    I started my Mexican food journey when I was sick of ground beef burritos and meat in my house.     Oh my goodness, this is EXACTLY how my Grandmother taught me how to make Caldo de Res!! I’m 65 years old now & EVER Mexican meal I make she taught me to make. She was from Mexico but moved to San Antonio in the early 1930s. I think that’s why you cook so much like she did. Thank you so much for all the memories.

    Loved watching you make the caldo de res. Brought back a lot of memories for me from when I was younger. My dad would make caldo de res, caldo de pollo, menudo, and posole. My siblings and I were spoiled with homemade soups. I don't care for store bought or restaurant versions. Enjoy watching your videos.

    I love that I found your channel because living in an area where I only have American grocery stores, it’s hard to ask for meat in Spanish. “Can I get carne de res con tuétano, please”😂😂 Now I know that official name for the meat to make carne de res.

    Oh my Gosh!!! EVERY ingredient you used, is what my relatives back in Midland, TX would use!!! 😁 I sure do miss H-E-B 😔. Living in Portland, OR has some nice authentic Mexican food, but doesn't compare to that of Texas.
    Made this Caldo de Pollo last week & it INSTANTLY took me back to all my relatives gathering to enjoy a meal like this. ☺️

    Arnie you shared with us a salsa verde recipe that I really enjoy.. now I would like to share one of my favorites... a lb of jalapenos and lb of serranos. Place them in a colander in a dry cool place as little humidity as possible, let them age till they turn colors yellow,green,red, orange takes about 4 to 6 weeks(remember to rotate them once a day) believe me it's worth it. Then make your salsa 🔥🔥🔥🔥

    This reminded me so much of my moms caldo de res, I could almost smell and taste it!
    I was enjoying it vicariously through you lol
    It brought back so many good memories of her cooking. I think I've watched like 10 videos so far in a row because your style and food reminds me so much of my moms.
    She was a great cook, she made everything taste so good. I'm very thankful I got that gift and love for cooking and baking, my mom inspired me every day in the kitchen. ☺️

    I am from Jalisco. It’s my favorite soup. We don’t put garlic, tomato, comino or tomato sauce. Everything else YES. We can also put chayote and definitely a bunch of cilantro. I love the way the house smells. Everyone fights for the bone marrow. Put it on a tortilla and it’s so delicious.

    I fell in love with this soup in Tracy, Ca. The grocery store, Mi Pueblo had a food court. They grilled chicken everyday. The smell brought me in and I could never get past the Caldo Res. I just got all the ingredients, they used chayote instead of zucchini, I’ll be making it soon! Love your energy!

    I did a couple of things different on mine. I browned my beef shanks first...Then I cut them up into pieces and I removed the bones and fat/grissel from them. I put the bones and fat in the water first and let them cook for at least an hour. I scooped all of that stuff out and put the meat in. At the end it resulted in pure goodness.
    Also instead of just water I put a big box of chicken broth and water both in there. It turned out FANTASTIC.
    The only hiccup I had was I needed to go run an errand so I specifically said to the others at home "this will be ready in 15 minutes. Turn it off and go ahead and eat..." but when I got home they had eaten, but they left the fire on the whole time. It tasted great but my veggies were mush.

      Glad I saw this. I was wondering if anyone else thought to brown the meat first. I always do that in this sort of dish as well as slow cooker roast and such.

    My favorite, I've had beef hocks n I've cooked with spicy sausage n I'll use a packet of sason seasoning instead of tomato no bueno for my tummy n I used green beans,soup is soup n yes rice pairs with soup 🤤

    I've been looking for the perfect cauldo de res recipe (It's my absolute favorite!) But none of them were quite right to me- this one is spot on! I love it so much! Combined with the rice- I don't know if there is a better meal. It's sooooo good.

    Arnie I had made my caldo de rez with stew meat. I prefer to sear the meat first with a little oil then make caldo. The other thing I do is right after I throw in the zucchini, I rinse some rice and add it to my caldo. Couldn't afford cabbage but it was still so good. A week later, I still had all these veggies but no stew meat so what I did was cook some ground beef and prepared just like the caldo. I didn't have corn on the cob, but I had a can of corn, but it really came out good. So delicious 😋

    The first time I've eaten this was in Alamosa Colorado cooked by my pastor's grandmother.
    He we were in for a treat for authentic Spanish food, when I saw the dish that was being served, I whispered at my pastor "This is not Spanish food, it's Filipino food", after few hours of this back and forth debate, it dawned on us that the Spaniards were in Mexico and Philippines for 300+ years. The Philippines also has a town called Mexico due to Mexican soldiers, slaves, and prisoners that were brought by the Spaniards via the Manila/Acapulco galleon trade.
    I was born and raised in the Philippines and we have a similar dish called Nilagang Baka(boiled beef) it's usually served on weekends and definitely Christmas eve after midnight mass and New Year's eve at our house.

    I also add Yucca, green beans and chiyote to my caldo. Before I serve in my plate I wip a fresh egg slice half of a banana and add some molcajete salsa. It takes it to another level.

    Looks delicious. I also use chayote when I make caldo. Put the bone marrow on a corn tortilla with a little bit of salt, tastes delicious.

    My girls do not like chunks of tomato and onion in the caldo, so I blend it and add the mixture while cooking. Other than that we usually have arroz and guacamole on the side. Now I’m hungry 🤤

    My mom made GREAT caldo de rez and caldo de pollo. I've never tried to cook some, but I think now that I have your recipe, we're going to have to rectify this situation. 🙂

    Your caldo looks so good. I like to peel a bell pepper and Anaheim Chile and dice them up small. They melt into the broth and give the broth such a good flavor.
