My goodness, she’s a baking engineer! A cupcake with a butter cookie and a strawberry and have strawberry ice cream icing.... in one bite!!! Sheer Genius! And NOT that sucky sour American strawberry ice cream! Good old fashioned sweet strawberry ice cream.... I MISSS UK soooooo much!

I have made the strawberry cupcakes twice now. The first time I made the cupcakes the strawberries I used were too big. It caused air pockets in the dough. Today I used smaller strawberries. The cupcakes are delicious. I love when I bite into the cookie it’s brings

This is a perfect marriage of cupcake cheesecake from my childhood (with cookie/biscuit bottoms) and HOLY COW THERE IS A STRAWBERRY INSIDE WHY DON'T MORE PEOPLE DO THIS?!?

The day i watched you on "Netflix" i got addicted to your cooking. Most of all gal...your personality is "spot on" don't ever change. It's hard to stay happy for ppl but having a great continual belief most definately works to remind us how grateful we are to have someone like "YOU"! To remind us. Remember to take a break once in awhile! I'm from the USA. Thank you. I'm a Canadian but I'm grateful in so many ways!!!

DELICIOUS!! I love strawberry shortcake & this is a new take on a traditional strawberry shortcake as a cupcakes even better. Not everyone like cakes but cupcakes are just a mini cakes 💕

By far the best Strawberry cup cakes ever. They are Soo good. A magnificent delicious creamy cake. I even made my own clotted cream because I couldn't find it where I live.

I cant help but wonder if strawberry puree, perhaps dehydrated a bit at a very low temp work better than strawberry ice cream. Otherwise recipe looks great.

I actually made so e of these for the first time today. Have to admit they turned out quite well. I always thought I had a sweet tooth . Apparently not. Hubby and son like them . I have decided next time I will miss out the strawberries and use a less sweet frosting. The actual cake mix is divine.

I live in a place where clotted cream isn't sold and is crazy expensive to order. I've made my own before, but it's a "time suck" and a bunch of trouble. Can I substitute full fat yogurt for the clotted cream in this recipe?

The frosting didn’t come out right for me. Is anyone else having the same problem. I followed the instructions to a T and cupcake came out perfect just the frosting. What am I doing wrong? I used Haagen Dazs strawberry ice cream, could that be the problem, I don’t know.
