Rock On! I just bought my 1st DRZ!! I wanted a bike that would fit on my Jeep Wrangler/hitch/dirtbike carrier. And I just sort of like DRZ's. I plan on using my Jeep to haul my DRZ around the country then use the DRZ to explore. I've thought about 18"-20" rims+knobbys for off road. I'm pretty sure the factory 17 inch rims with Shinko 705's will be fine.
I apologize for the late response. Yes the shinko 705's are and okay tire off-road but I found that the 805 which are a little bit more blocky in the rear with the combination of the TKC 80 front is just a little bit more adequate however that's not really my purpose for this bike it's just my winter tire set that gives me a little bit more stability when there's more sand on the roadway which can be a hazard for purely street tires

Sorry for the delayed response, The KLX 300 is a pretty good bike that is fairly easily upgradable if you find the right person to tune it for you. Barkers makes an exhaust for them if I'm not mistaken and that frees them up quite a bit. I don't know how much restriction there is on the intake side but I would definitely do my research and free that up in addition to a full exhaust but tune it immediately and not ride it until you do because it may cause engine damage due to the extremely lean condition. Bill Blue still makes his legendary 351 kit that I believe works on these just like they did the KLX 250. Do your research and you'll be fine. The KLR dinosaur is very heavy but is a very proven platform. Make sure that if you get an older one the doohickey modifiation has been done.
