You know,,, I've been outdoor cooking for over 50 years. Offsets, direct heat, gas grills, Weber Kettles, Cookshack smoker etc etc,,,,, I never thought I knew everything because I've watched a ton of videos over the last few years and have picked up a lot of tips and tricks. Babyback Maniac, TRoy Cooks, cooking with Ry, Meat Church, Franklin BBQ to name a few. But never have I ever learned as much as I've learned from your videos. Hi Bradley, Brady here, but I’ve been called Bradley 1/2 of my life. I’ve been BBQ’ing Brisket for 20 years, but never thought of using a Select brisket for chopped beef sandwiches. Thank you for that! But the Homemade pickles and thin sauce is sent from “Bradley the BBQ Gnome” and that’s a Beautiful thing!!! You and Jeremy Yoder are my dudes! I watch many other BBQ Channels, however you 2 are my Sinai’s the two that I listen to and take notes from. I was a welder by career for 45 years before a massive injury 3 years ago took my career away 15 years early. I hope that I can get back into my own shop so I can build my smokerz and grillz for our new home. I just want to thank you for all of your blessings that you have bestowed upon me. Someday I’ll shake your hand and thank you properly. Until then, I Truly thank you Bradley. Brady
I've been cooking select briskets for years. I splurged one time, and got a Prime, and my wife did notice a difference. But then she got mad when I told her how much I paid for it. The Bark is what she loves.
My dad loved the "BBQ" sandwich at Dairy Queen when I was a kid. This is that next level. I wish he was here today so I could make him this! Thanks Bradley.
@@altongehringer9858 i guess they didn't dare try that in Texas. Bbq of any kind is a tough sale here. Seen a many a place go belly up. And most that are still around need to. Martins are from my hometown, and the only way they’re better is right off the line. They have a bakery/store at the main plant. It’s like heaven having an open kitchen
Mr. Robinson - I’m visiting Austin from Toronto Canada. And my first stop from the airport was LeRoy & Lewis. I almost died in the heat but the food was worth it! The beef cheek was insane! I also saw the first Chud box - thanks Travis. 🙏🏾. If you visit Austin definitely check out LeRoy & Lewis the only thing better than their awesome food is the people cooking and serving it!
Chuds BBQ (Brad), I NEVER get tired of watching your videos. You are AWESOME! Thanks for providing such great content and tips. Of all the BBQ channels on UA-cam, your channel is the only one that drastically improved my skills. And yes, I subscribed and liked...
Great video! I’m glad you mention the history of chopped beef in Texas. The popularity of Central Texas BBQ makes everyone think Texas BBQ has always been like that, but that’s just not true. I grew up in North Texas and chopped beef was way more common growing up. Yes even bbq sauce.
Nowadays select brisket is about all I can afford so I ain’t wasting it on chopped sammys. I’m slicing it up like it was top notch. Most people never know the difference, or else they are good liars. I did my first overnight rest even though the interweb said it was a bad idea. It made a big improvements that select brisket. Thanks for your inspiration!
My mom used to bring home a pound of chopped beef from Underwood's in Brownwood, TX, along with their rolls and some pickles/onions. That's a nostalgic central Texas dinner for me.
Growing up in PA, there was always a bag of Martin's potato rolls in the bread drawer. I'm glad to see that they finally made it to Texas, where I now call home. Now, if I can only convince Sheetz to expand into Texas...
Mate, I don't even live in North America, let alone the northern hemisphere but I absolutely love your local history/knowledge tidbits you thrown in. Its super interesting to learn and I hope you keep doing it.
Years ago I was luck enough to get some BBQ from the John Mueller Meat Company in Austin. Amazing food. The brisket had an amazing crunchy peppery bark while the meat still being tender & juicy inside. This reminds me of that.
Good stuff man! Martins is the goat! I remember when they first hit Austin. I was workin at Browns bbq and Basil came by and promised they’d be the next big thing. Man he was right!
Thanks for all these great videos. I'm doing a cheap Walmart brisket right now for the 4th of July weekend cuz that's all that I could find up here in the Yankee land on short notice. Take care and thank you for the wonderful videos entertainment and education. Cheers.
My world just got rocked!! Can't wait to try this!! Thank you Bradley Robinson for another amazing tutorial!! What is that metal disk that you made that sauce on? Is that an actual burner?
Didn't get to watch this for a couple hours after it dropped, but instantly remembered the A Frank reference about the juicy lemon. I also enjoyed "Boil away, boil away, boil away!" to the tune of Orinoco Flow.
I use Martin's Potato Buns and Bread for burgers, pulled pork, hotdogs, brats, sammiches.... everything. Its not just because I live in Pennsylvania either, they are that damn good!!!
No lie about Martins buns. I pick up potato buns and hor dog buns almost every time because of the taste and how they hold up. Didnt even know it was a commercially accepted thing
That is why they invented bbq sauce... to cover the not so fresh meat taste. From no refrigeration. Martin's potato rolls. From close to my hometown. York, pa.
As a Central Pennsylvanian with Martin’s rolls and hot dog buns in my kitchen right now, I whole heartedly agree with your love for Martin’s. Love the vids.
It's so rare to find a chopped beef sandwich at a restaurant now. I ran three different BBQ's in the 90s and we used the flat for sliced (which also makes a tremendous sandwich with mayo and white onion) and the point for chopped, mixing it with a prop sauce we developed.
I stumbled up on this channel like I do so many things. I'm really glad I did. Got a cheap or less expensive brisket and turned into chopped beef just like you, thanks to you. Fun channel and really helpful. Just subscribed. Thanks.
Excellent videos Bradley! Congratulations on 100k + subscribers. My brisket I did after your pulling out all the stops video for brisket turned out excellent. What I would love to see is a couple different smoked bbq beans recipes. Maybe a savory and a smokey. Please don't use canned beans or if you do please make a video using dried beans as well. Looking forward to it!!
Thank you for all the great videos. Could you make a video on how to make all the bbq pickled veggies. You know pickled red onions 🌰, pickled jalapeños and 🥕 and the pickles please 🙏?
This was so great! My biggest concern was spending a ton of time and money on a high quality brisket just to jack it up. But combining this video, with your weber kettle brisket video seems like a great way to go!
As soon as I get out of my jammies I’m headed to Wallymart for a cheap brisket…but wait, no need to get out of jammies to shop at Wallymart!
Sad but true. Bring $$$ meat went up
And. it. will. be. Delicious
When in rome

So does my dad. One of the dairy queens here still sells them.
I have no recollection of DQ ever making a bbq sandwich. What yrs would this have been 🤔
@@duanehenicke6602 Michigan in the 80s and 90s. Not a great sandwich, pretty much just over cooked beef mush in BBQ sauce but my dad loved them!🤣

Real pros at this kind of thing.

Chopped beef is actually called a chopped cheese and it originated in NY. Good call.

Martins Rolls for the win! Fry up some pork roll and only thing else you need are some Martins rolls.
Once again you've proved to be the best on UA-cam!
The best BBQ'er on UA-cam bar none. Bradley is the man!
Love it!!! Brad, how long do those pickles have to, well... pickle, before you can use them?
Love that you included the recipes
Juicy lemon. Classic throw back.

Potato rolls are the best. Can't be beat. Brisket looks good too.
Love Martins Buns. I use them every time I cook something. They are amazing
I haven't done this since the last time I did a shoulder clod. Love me some chopped beef now 😋
Bradley, you are the best mate 😊

Best brisket I ever made was a choice. All the primes since have been great but still can't hold a candle to that choice. BBQ magic!
Consider cooking Prime or Wagyu low and slow in your backyard smoker such as at 225 in order to allow the marbled fat to render out.
LOVE LOVE LOVE Martin's !! Been eating them for decades
My God...I haven't had a chopped beef sandwhich in such a long time. Glad to see you bring a new light to this great sandwich.
