Taco Salad, the Food & Family Way

- This video was filmed before Christmas. A couple of days later, we left for our Christmas vacation in Gatlinburg and Dollywood. When we returned, I came down with the flu and as I was getting over the flu, Pop got sick. So it's a bit late, but it is so worth the wait. This taco was absolutely delicious. You can make the meat ahead of time if you have extra time one day, freeze it, and when you want a salad, thaw and reheat. Serve over chips with lettuce, tomatoes, onions, salsa, taco sauce, guacamole, sour cream, cheese, or your choice of condiments. Or simply, sprinkle over tortilla chips, add grated cheese, and heat in oven until cheese is melted. Yumm! I hope you will give this a try. And don't forget, order your copy of my cookbook. We like to cube up velveeta queso cheese and add a little rotel and microwave until cheese melts. We drizzle it over our chips and meat, then add the toppings. Oh my goodness!! It’s so good. We love taco salad.

I put lettuce first , crushed tortilla chips , taco meat followed by cheese, then toppings of choice. Easier to eat with a fork that way.

I love a big taco salad for lunch or dinner. I don't care for raw onion but the rest sounds delicious! I like to put my cheese on the hot meat so it can melt a little.

I have never been a fan of avocado. My daughter and grand girls love it. But now taco salad and taco's, burritos and on and on...love it! I like the thin chips too. Pop Jones is too funny....lol. Sour cream on mine please....lol. I buy those taco bowls at the grocery and I like those too. You bake them in the oven for about 5 minutes and you are good to pile them full. That looks yummy Pop. I like them your way too. 🥰

I can't believe it I wanted to make this same thing tonight! Last night I made your broccoli casserole and everybody loved it! Had roasted turkey breast with wedge roasted potatoes. Thanks for another great video, Karen! This is going to sound SO strange, but the taco salad dressing that my family makes is a mixture of two ingredients, Miracle Whip and lemon juice, whisked together in a bowl until drizzle consistency. My mom got the recipe from a mexican restaurant in Enid, OK decades ago, and it's what she always made and it's what I still make today. The tang of the lemon juice and the sweetness of the miracle whip are so good. We drizzle that on top of our taco salads, drizzle taco sauce on top of that and mix it all up!
I call those loaded nachos around my house. Lol.

Try the cheese on top of the hot beef, melts and then nice and gooey! I also like black olives added. Taco-flavored Doritos are also awesome for added flavor!

Omgoodness Mrs. Jones, my family had tacos for Christmas dinner. I certainly wish that I only had to make a pound of taco meat. But Nooooo, I had to make 15 lbs. of taco meat. Nonetheless the family enjoyed it.

I love taco salad. I make homemade queso to go with it and then have nachos for a night. I love diced onions, tomato, black olives, sour cream, and franks hot sauce…
Tonight I’m have air fried rabbit legs and saddles with mashed potatoes and macaroni and cheese.

I worked for a trucking company several years. I love quick simple meals but I do more complete meals also. 😋 Will try to video more of those in future.

It's just ground chuck or beef, add taco seasoning using instructions on package. ❤️😋
