- "That smells good. I could smell it when I was coming in." Pop Jones says he can smell the goodness all the way in the garage as he was coming in from work. These little delicious bites in gravy are absolutely amazing and so easy to make. You can do them in the pan as I did, or bake them in the oven as our family before us did. Either way, I hope you make them. Original recipe below as well as the changes I made.
Enjoy!

1 lb ground chuck
1/2 cup seasoned bread crumbs
1 egg
1/2 cup onion, diced
3/4 tsp salt
1/2 cup uncooked rice
1/2 tsp paprika
1 tsp garlic powder
1 Tbsp oil
Directions:
Drizzle oil in large frying pan.
In a large bowl, combine ground chuck, breadcrumbs, egg, onion, salt, paprika, garlic powder, and rice. Make golf ball size meatballs and flatten them out into patties. Add to frying pan. Cook until golden brown on both sides. Remove from pan and set aside. Make the brown gravy.
Brown Gravy
2 Tbsp oil
2 Tbsp flour
2 Tbsp brown gravy mix
1 Tbsp beef bouillon
1/4 tsp balsamic vinegar
2-3 cups beef broth
Heat oil in a pan. Add flour and cook 2-3 minutes stirring constantly. Add brown gravy mix, beef bouillon, and balsamic vinegar, stirring well. Add beef broth until the right consistency, not too thick but not too thin. Add patties back to the pan with the gravy and let it simmer on low about 20 minutes. Serve and enjoy!

1 pound ground beef
1/2 cup breadcrumbs or oatmeal
1 egg, slightly beaten

1/2 cup onion chopped
3/4 tsp salt
1/2 cup uncooked rice
1/2 tsp paprika
2 Tbsp green pepper chopped
Directions:
Mix meat with crumbs, beaten egg, onion and salt. Add green pepper and paprika to meat mixture. Add uncooked rice. Shape into small cakes. Pour tomato juice over cakes, or if tomato soup is used, add 2 cups boiling water to soup and then pour soup over cakes. Put lid on pan and cook over low heat 45 minutes or put in 400 degree oven and bake for 45 minutes
Looks juicy and fabulous and reminds me of when mom used to make those delicious brown gravies . Could you serv that with buttered egg noodles as well??? yum yum 😋😋😋 love that kitty
Absolutely 😋
I went to a friend's picnic back in 1973. They made Porcupine meatball. I just remembered about them the other day and wanted to make some. I was just filping through UA-cam and saw you making them. It was the first time i seen your video.
My mom used to make porcupine meatballs when I was a little girl! My goodness that recipe sure does bring back memories!
Thank you Miss Karen California is watching ❤
🥰. Love Pop’s idea making “Hogie Sandwich’s” 🥰. House Full Of Deer Hunters this weekend 🥴Geez guess What Saturday Lunch is Going to be 🥰. Thank You Karen 🥰
What a wonderful cookbook! It is surely a precious family heirloom. . . and it keeps all the memories alive with every meal made. When I was a child, I thought porcupines were so elegant. Probably because we had them so rarely.
Hi Karen, I just love the idea of how you cooked this in 1 dish 👍🏼👍🏼
You both are such a sweet couple 💞
I find recipes are so valuable and will be passed down with so much meaning.
Thank you for alowing all of us to enjoy you having time to cook your yummy food.

I was just remembering when I was a teenager, my cousin making these in a brown gravy. Hers were round. It brought back good memories. I'm putting these on next weeks meal plan. Thank you

I love porcupine meatballs but my husband’s not a meatball fan but I bet he’d eat porcupine discs. Thanks for sharing this family favorite recipe with us, I’ll for sure be trying these. My husband and our youngest daughter likes to put a spoon full of corn in the well of mashed potatoes then gravy over it all.
Your outfit is adorable today!
My mother made porcupines quiet often. The recipe is delicious made the original way with the tomato base sauce. I’m sure your way is good as well.
That’s funny .. I do the same with my mashed potatoes and peas! Karen I got the three piece paring knives from Rada and I love them!
Hi Karen. I miss you guys when I can't watch for a while. From Az where it's too hot already.😇🚲 I'm

I just ordered the cookbook the other day. Excited waiting for it.
Thank you. I hope you enjoy it as much as I did writing it. ❤️
Hi Karen, Porcupines was one of the first recipes I made when I was about 14. I found it in the women's companion cookbook that my grandmother gave to my Mom. Fast forward 50 years, and I haven't made them in a while, but your recipe has me wanting to make them. Thank you for the memory boost, and thank you for sharing your recipes. 🙂♥️
I'm definitely going to make this dish. It looks delicious
Wow delicious looking dish ❤
❤ do not worry about the noise your utensils make❤❤❤
Just as your balsamic vinegar enhances the gravy ,so does a few drops of soy sauce,a lil tomato product ,too
Yes, tomato paste is lovely in brown gravy
I do enjoy your videos so much. Never heard of porcupines, but I'd like to give them a try. I wonder if I could trouble you to share where you found the gloves you wore in this video? Thanks again for sharing your kitchen with us.
Thank you. We get them wherever we shop. Pop Jones gets them from his work also. ♥️♥️
Karen and Pop,
I am going to try these in a week or so and let you know. Take they look delicious and I cannot wait. Thank you for everything you do.
Good morning Karen this looks so good I will be trying this hope you and Pop Jones have a blessed weekend take care
Karen, Do you think you could demonstrate how you make a baked half of ham?
I'm attaching a video that we did of Pop Jones making his ham. He's our ham baker and it's amazing.

Porcupine meatballs are still a favorite meal for my family. We cook them on the stovetop and simmer the balls in tomato soup and water. There is usually some loose rice that thickens the tomato soup and it goes great with mashed potatoes and peas. We had porcupines for dinner just a few weeks ago but now I'm hungry for them again!
Thank you for this tasty reminder!
Winner as usual. Can't wait for volume 2 of your cookbook.
👋♥️🙏♥️👋I believe we called these meatballs “Swedish Meatballs”. They are delicious. I also like them in a mushroom gravy. Yummm. Thanks Karen. Have a great weekend. ♥️👋🙏👋♥️Jennifer
Looks and sounds delish Karen ! And hello Pop nice to see u2 together having test taste😊
They look delicious. I'm going to have to try making these. 😊
Looks delish, as always. I'll be making that!
Hey Karen , what is the name of the dry beef mixture for gravy you use? Thanks Karen I will be making this one! Yummy
I use McCormick brown gravy.
I love porcupine balls!!
Karen - I remember this recipe for Porcupines from my childhood - my mama made it the same as you with the brown gravy and mashed 'taters - and peas & carrots were a favorite as well. Thanks for the memory lane walk. I love the expression on Patchie's face at the end of your videos.
yall fix me a plate, i'm on my way...
Why can't you have tomato and brown gravy? We do. Delicious
You can. Lots of times, I will put tomato paste in my brown gravy. But, I didn't want tomatoes and/or tomato sauce with these.
That looks great. I even think I can smell it lol
😋 yummy !
I sitting watching you and eating some oatmeal with maple flavoring, raisins and walnuts. I know better than to watch you without eating 😂. Sounds delicious. Love and big hugs. ❤❤
