    ✅Ingredients
    Vanilla Sponge Cake
    • 1 cup unsalted butter, room temperature
    • 1 ½ cups sugar
    • 2 teaspoons vanilla extract
    • 1 ¼ cups whole milk, warmed to 100 degrees F
    • 3 large eggs, room temperature
    • ¼ cup vegetable oil
    • 3 ½ cups cake flour
    • 4 teaspoons baking powder
    • ½ teaspoon salt
    Chantilly Cream
    • 2 cups heavy cream
    • 2 teaspoons vanilla extract
    • 8 ounces cream cheese, softened
    • 8 ounces mascarpone cheese, softened
    • 2 cups powdered sugar
    Berry Filling
    • ⅔ cup seedless raspberry or strawberry jam
    • ¼ cup water
    • 4 cups fresh berries, strawberry, blackberry, raspberry, or blueberries
    • 2 teaspoons lemon zest
    • 2 tablespoons lemon juice

    Vanilla Sponge Cake
    1️⃣ 00:15 - Grease two 9-inch pans. Line the bottom with parchment paper. Preheat an oven to 350 degrees F.
    2️⃣ 00:22 - In a large mixing bowl, use a hand mixer to cream the butter and sugar together, 2 minutes, until creamy. Beat in vanilla extract.
    3️⃣ 00:51 - Use a fork to combine the milk, eggs, and vegetable oil together in a bowl or 2 cup liquid measuring cup. Set aside. In another mixing bowl stir together cake flour, baking powder, and salt.
    4️⃣ 01:35 - Add 1/3 of the dry ingredients to the butter mixture and mix in until just combined. Add in half of the milk mixture and combine. Add in another 1/3 of the dry ingredients until combined followed by the remainder of the milk mixture. Add in the remainder of the dry ingredients and mix with the hand mixer until just combined, using a rubber spatula to scrape the sides and bottom to make sure everything is mixed in.
    5️⃣ 02:35 - Divide the batter evenly between the two prepared pans. Bake at 350 for 25 to 30 minutes. Let sit in pans for 5 minutes and then transfer to a wire rack to cool completely.
    Chantilly Cream
    1️⃣ 02:59 - In a large mixing bowl, beat heavy cream with vanilla extract until stiff peaks form.
    2️⃣ 03:16 - In a separate mixing bowl, cream together cream cheese and mascarpone until light and fluffy, about 2 minutes. Beat in powdered sugar until combined and smooth.
    3️⃣ 03:53 - Fold whipped cream and cream cheese mixture together using a rubber spatula. Fold until just combined. Refrigerate until ready to assemble cake.
    Berry Filling
    1️⃣ 04:19 - Place mixed berries into a medium sized mixing bowl. Add in lemon zest and juice and toss to combine.
    2️⃣ 04:42 - In a microwave safe bowl, stir together jam with water. Microwave until melted, about 30 seconds.
    Assemble Cake
    1️⃣ 05:02 - Slice each vanilla cake layer in half to create four layers.
    2️⃣ 05:22 - Spread 1/3 of the jam filling onto the bottom cake layer. Top with an even layer of chantilly cream and then place 2/3 cup of fresh berries on top of the cream.
    3️⃣ 05:39 - Continue layering with cake, jam, chantilly cream, and berries. Top final layer with remaining chantilly cream and frost the outside. Optional garnish the top with additional berries.

    I followed the recipe and the cake come out perfectly. It tasted similar to the whole food cake. The only thing is that I couldn’t cut the cake into four layers. Also the raspberry jam I purchased was way too sweet and tasted like grape jelly 😝. The cake and frosting was amazing. Thank you for the recipe.

      I got one from Whole Foods and it was great. I never have the icing on any cake, always removing it, but not on this cake. It’s now my favorite cake. I’m on a diet, so I only had 4 slices instead of 8. I ate the entire cake in 3 nights after dinner. Just warning up for the holidays.

    Thank you for your quick response, I could even show you where I baked my cake, it was exactly a 9”, exactly as you instructed, trust me I’m very good following your instructions cause I know you are one of the best and most trustable on UA-cam that’s why I did everything step by step ( only thing was different my dough was not so thick ) but it was all a total messed, please advise.     Crazy you posted this recipe. Last week I made one that was fairly close. I only stacked it with 2 layers, used just mascarpone cheese and a homemade mixed jam as the filling with fresh berries on top. I've never used mascarpone cheese before. Gotta admit. It was such a good frosting. I told myself the next time I make it I was going to use just cream cheese (that was an option should you not have mascarpone on hand). After seeing this I'm going to use both!! Thanks for sharing...

    made the cake today for my son's birthday. everything was delicious. BUT the whipped cream was slippery and the layers were sliding and I had to keep trying to slip it back to center. Can you do a video on how to avoid this from happening.

    Hey Rachel, What a fantastic recipe, I would love to make something like this, as a matter of fact, yesterday at the Deli/Meat store here I was shopping and he always has kinda different imported food at a good price, and he had Mascarpon that same size as the recipe for $1.49, I bought 2 of them. Now the only question is, can I pull this off. At any event, I really enjoyed watching you make this happen, thanks again for sharing!! Take care!!

    Does the sugar have to dissolve complete when mixing with the butter?

      It won't dissolve completely but should be thoroughly incorporated and creamed into the butter :)

    I keep hearing from several sources that you should grease the entire cake pan--including the bottom--before putting down the parchment paper. Some then say to grease the cake side of the parchment as well. Why would it be necessary to grease the bottom of a cake pan if you are going to put down a piece of parchment anyway? Does anyone know the answer to this question?

    I made this for my daughter in law…it fell to pieces…it’s still delicious tho…I’m thinking too much frosting between layers? Wish I could post a before & after pictures…at least it fell in the fridge and not on the ground…that’s too much work for that to happen

    What is Cake Flour in the Uk?? Or substitute??

      Cake flour is lighter in protein than regular flour. If you can't find it you can substitute for a mixture of All purpose flour + cornstarch. For every one full cup of all purpose flour, remove from it 2 table spoons of flour and add 2 tablespoons cornstarch. Hope this was helpful :)

      Powdere sugar is super easy to make. Just run regular granulated sugar through a blender or food processor.

    I trust you and always follow you cause your recipes are awesome but this is the first time that the recipe sucks, cake was a disaster, came out all out of the pan and my oven almost have to give away, I’m crying I don’t want to start cleaning. Trust me I follow every step. Totally disappointed. Using the cake flour and so much baking powder totally a messed!

      It sounds like you had too much batter for the size of pans you used. This recipe calls for two 9-inch pans. Did you use two pans? What size were those pans?

      @@Thestayathomechef as I mentioned I did it today again and did it one in the same pans 9 inch and other bigger and was a totally messed, the batter came out leaking, I wish you could see it, ( I could show it) so sad never failed any of your recipes 🤷‍♀️😭

      There's too much batter for your pans. How tall is the side of your pan? Something is not right about the pans you are using.

      @@Thestayathomechef thank you for your replies but there are exactly as you explained and the tallest and as I mentioned I did it at a bigger one to be safe and still came out all the dough totally a messed. I think the amount of baking powder is totally wrong. But thanks though.
