✅Ingredients
CAKE:
• 1 cup salted butter softened
• 1½ cups sugar
• 3 large eggs
• 1½ cups buttermilk
• 1/4 cup lemon juice
• 2 teaspoons vanilla extract
• 1/2 teaspoon lemon extract
• 3½ cups flour
• 4 teaspoons of baking powder
• 1/2 teaspoon salt
• 1 tablespoon lemon zest
LEMON FROSTING:
• 1½ cups softened butter
• 8 ounces cream cheese softened
• 2 tablespoons lemon juice
• 2 teaspoons vanilla extract
• 1/2 teaspoon lemon extract
• 6 cups powdered sugar

1️⃣ 00:00:08 - Grease three 9-inch pans. Line the bottom with parchment paper. Preheat an oven to 350 degrees F.
2️⃣ 00:00:17 - In a large mixing bowl, use a hand mixer to cream the butter and sugar together.
3️⃣ 00:00:41 - Use a fork to combine the eggs, buttermilk, lemon juice, vanilla extract, and lemon extract together in a bowl or 2 cup liquid measuring cup. Set aside.
4️⃣ 00:01:09 - In another mixing bowl stir together flour, baking powder, and salt.
5️⃣ 00:01:25 - Add 1/3 of the dry ingredients to the butter mixture and mix in until just combined. Add in half of the milk mixture and combine. Add in another 1/3 of the dry ingredients until combined followed by the remainder of the buttermilk mixture. Add in the remainder of the dry ingredients and mix with the hand mixer until just combined, using a rubber spatula to scrape the sides and bottom to make sure everything is mixed in. Gently fold in lemon zest.
6️⃣ 00:02:29 - Divide the batter among the three prepared pans. Bake at 350 for 25 to 30 minutes. Let sit in pans for 5 minutes and then transfer to a wire rack to cool completely before layering and frosting.
RECIPE NOTES:

Jamunah Anpalakan I followed measurements from the video. However, I add 1 extra egg yolk and add more lemon juice.

Hi Rachel love this recipe and wanna try it out tomorrow, I just want to get the recipe right. In your video you said to use 1 1/2 cups of buttermilk and 1 1/4 cups is listed and for the frosting you said to use 1 cup butter but its listed 1 1/2 cups of butter and 5 cups of powdered sugar but again 6 cups are listed. Also in your comments someone asked about the cake flour and if they still have to use baking soda and salt but your ingredients listed have baking powder and you also said baking powder in your video, I just want to get this lovely cake recipe right and for mine to come out perfect as yours. Can you please let me know the correct measurements. Thank you

Well the icing came out great! It taste very lemony 🙂 I did use 1 1/2 tsp of lemon extract. However the cake had very little taste and it was too dense.😳 maybe because there is no baking soda? I’m a beginner ✌🏽

Love the recipe! I'm wondering if I can substitute the lemon zest and juice for carrot, its juice and the rest of spices? I love carrot cake but I'd very much prefer making it without oil and baking soda, because I can't get it to work. So, would there be a problem if I make it butter and milk based, like in this recipe?
Recipe development on cakes involves extensive testing. You'd have to just be willing to put in the work.

As mentioned by another comment, the measurements for the buttermilk in your video and the written recipe is different. Is it 1 1/2 cups of butter milk then? For the frosting, is it 1 cup or 1 1/2 cup softened butter? =[ Also for the frosting, is it 5 cups or 6 cups of powdered sugar? Thank you.
autumnskies Since it doesn’t look like she replies to comments- I will answer you from a Southern Cook’s point of view.....She said this cake batter will be gloopy not runny...She used a 2 cup measuring cup to mix everything together so, I’d guess she used 1 cup of buttermilk....I’ve never used more than 1 cup of buttermilk in a cake so, I’m guessing there(My red velvet calls for 1cup buttermilk and so does my strawberry cake).....On the icing...It’s just cream cheese frosting with added lemon flavor(Any cookbook worth having will have a cream cheese frosting recipe) I use- 1cup butter, 1 cream cheese(both at room temp) and 6 cups of Powdered sugar. And whip it good. LOL. I don’t make my icing until the cake has cooled so, I don’t put that much plastic in the land fill off of one cake!!!! But, each to his own, right? Truthfully, this sounds like Paula Deen’s recipe...I have all her cookbooks and seem to remember this cake. I baked it for a bake sale.....Might want to look for Deen’s recipe to get the proper measurements. If you can’t find it let me know, I’ll search thru my cookbooks and post the recipe for you. Hope this helps!!!!

Quick question on the buttermilk I just bought the cultured buttermilk blend power by the saco pantry brand directions say 4tbps of saco buttermilk blend + 1 cup of water = 1 cup of buttermilk
Now can Substitute the water for milk 🥛

I watched this video a few times before and I think you did an amazing job demonstrating on how to make a lemon cake.
I want to learn how to make it somday. However, in the written recipe for the cream cheese frosting it said use 1 and a half cups of butter when you said 1 cup of butter and it also said 2 teaspoons of vanilla extract when you said 1 teaspoon of vanilla extract. Can you clarify that for me please? I'd appreciate it. Thank you.
