    made this today...WOW! IT WAS GREAT. This was a perfect pumpkin pie filling. Now all i need is to find the perfect keto pir crust to go with this recipe &my thanksgiving will be complete

    Thank you for this. I love love love pumpkin pie so much, but bc if health issues and a diabetic husband , I cant make a traditional pie anymore . I needed a great recipe without a crust. This is perfect. I'm going to make it a this week to try it, and a few times before the holiday. Yum

    Pumpkin puree on the shopping list! I'm going to try baking them in sprayed, silicone cupcake pans. Freeze and see if they pop out? Worth a try, to limit my servings. Late night snack... Only one a night, is my rule. LOL

    I made this with homemade pumpkin puree, and it was a watery mess. I strained the pumpkin pretty good, but you can't ever get it as thick as canned puree. Was more of a pudding than a pie. The pumpkin pie flavoured pudding was edible, but I would not make this again.

    What can I use instead of the heavy cream? I am allergic to dairy

      Dairy allergy here too. I used 2/3 cups macadamia nut milk. Turned out perfect. It would work really well with coconut cream as well. I've tried various brands and find cha's organic coconut whipping cream the best.

    This sounds delicious and I must try it! Jennifer, I have a question… I have an old Amish recipe called brown sugar pie that’s a custard like pie. The filling, I thought, would be good made like yours - without a crust. The filling ingredients are: 1 cup of brown sugar ; 3 tablespoons of all purpose flour, a pinch of salt; one can of evaporated milk and 2 1/2 tablespoons of butter with a sprinkling of cinnamon on top. My question is, what can I substitute the flour with? Can I use equal amounts of almond flour?
