I have never had allulose or swerve so I need to look into them first.
Will need to try this with all allulose. Can’t cope with the cooling effect or the intestinal disturbance of swerve. The last full sugar pie I made was in the early 2000s, based on a maple nut pie with a spiced pastry crust recipe that I was given by a food editor at Better Homes and Gardens. I don’t know if they ever published that crust, but it was fantastic. I made the pie with black walnuts and hickory nuts that I gathered and sorgum syrup from some Amish neighbors. Dad loved it because it was much like what his grandmother would make when he was small, using what they grew and gathered locally. When I was little, bushels of black walnuts would get spread on the driveway to dry and the be driven over by the car to remove the hulls.
Ironically Carolyn said the same thing about allulose in her interview with Steve from Serious Keto. She said she wasn't sure if it was the brand, or what, but she personally suffered gastrointestinal distress from the allulose but not the Swerve. Ahem...PEE-CAN is something you take on a very long trip, PUH-Cahn is something this Texas gal grew up eating! Little story..I moved to NC long ago and had a sis in law who pronounces it Peecan. She asked my husband to make her his famous PEE-CAN pie for christmas...he did this...he took a metal coffee can, used a printer to print out a huge amount of labels with the letter P fonts and stuck them all over the outside of the can then ...he baked a pie shell and stuck that PEECAN ontop of that baked crust and placed it in a nice box and wrapped it up as her Christmas present...it was a hoot! Best Christmas ever! Thank you for your recipe though, I will be trying it out this week.

This looks fantastic, and this Thanksgiving will be my first Thanksgiving eating Keto, so I think this would be great, I was thinking a very little bit of Xantum Gum might help stiffen up the sauce for when it cools too.
You won't need it. Once it cools completely, it will be perfect. Xanthan gum might make it overly thick.

Pecan pie is my favorite too. When I first went keto a few years back I didn't know which recipes were good (i.e. yours) so I just searched for pecan pie keto. Before the holidays I found Wes on H.F.L.C. doing a pecan pie taste test and his choice was yours. It was the same recipe I was already planning on making. It was excellent and I knew your recipes were the ones to use. I now have several cookbooks and love everything. Love your pecan pie dance, a dessert that good makes me dance too :)

I make my keto pecan pie with the caramel and maple syrups from choc zero and it’s the most amazing, gooey center you can imagine.
Do you boil the syrups at all or do they thicken up baking? I would love to know how you make yours! I plan on trying this one with the Allulose but would love another version to try as well. I can't have xylitol in my house because even if I tell everyone not to nobody pays attention if our dogs can reach a plate.

Looks beautiful~ I love working w/bocha sweet & allulose, often together. I also like to toast my nuts a bit prior to adding to any recipe~ just amps it up a notch. Pecans are my all-time favorite nut..ever, oh heck yes please for pecan pie!
*Shoot~ keep forgetting to ask, finally remembered, yay! Have you tried adding any egg/egg white or xanthan gum to your crust? I can't seem to keep mine from crumbling quite a bit, so I thought I'd check w/fellow bakers =) Thx, in advance.
I've never needed to, with this crust.... what brand of almond flour are you using?
@@AllDayIDreamAboutFood Typically Blue Diamond or Anthony's, though sometimes a generic, organic almond flour from my local coo-op. They all react the same, even w/lessening amount used a bit. After researching further today, I'm now wondering if the extremely arid climate I live in may affect the moisture content of the flour. I'm going to try storing it double wrapped in the freezer, see if that helps.
@@RV-there-Yet You might be onto something.. also, what is your pie pan made of? I think you could add more butter, rather than egg white. I find that egg white makes the crust tough, less tender.

So frustrated! Living in the UK we can't easily get Allulose (I think it was not allowed to be sold a some point) and Bocha Sweet USED to be on Amazon UK (stupidly expensive but it was possible to get) but now I cannot find it anywhere in the UK to buy. I've made this pie Thanksgiving and Xmas every since I saw it and this year I am scuppered. I've made the For-Two version as well but not possible easily for a full table like this year. ANY suggestions for a non-Allulose, non-Bocha sweet option? I thought maybe Sukrin maple syrup instead of granulated erithritol or maybe blend the erithritol into a powdered version? I really don't want to give up on this and not super hopeful as not seeing recent comments replied to buy I gotta try... :D

I never even had pecan pie (not a lamerican) but I was kinda imagining it ever since that one episode of true blood, and finally I found pecans that aren't as expensive as pine nuts, and enough to bankrupt you for a month, only to realize that this pie is basically nothing but sugar... so more like a joke I typed in "keto pecan pie" thinking "there's no way anyone would try to make keto version of this caloric bomb, and there you are. I'm almost amazed, except, you used brand names that aren't available in the rest of the world, so, no luck... maybe i should make one just to see what's it all about, but still, I need to pick a month, where I'm not going to eat anything else desert-like, other than that pie, cause it's crazy how much sugar it contains...
oh, I see "bocasweet" is actually bochasweet, as in kabocha, and it's still sugar, xylitol... not sure if that is technically keto then, but as a bio-technologist, I give this a nay!

For the filling I just used the swerve brown, butter and the swerve granular bc I couldn’t find the boch… and I didn’t know it needed the thickening agent so I had to take my pie out midway and add maple syrup 🤦🏻♀️I hope this is ok

Carolyn I don’t have Bochasweet but I really wanna make this pie. What other sweetener can I use? I have Swerve granulated or Lankanto monkfruit granulated. Will either of these work?? And would I substitute 1:1? Thanks for the recipe it looks great.

I have yet to make the perfect pecan pie since I went Keto. It doesn't taste like the real thing, but nevertheless I eat it anyway. i plan to make it this weekend I hope I get it right to taste like the real mcccoy, so I can bring it to a getogether Thanksgiving pot luck and see if people will like it and think it's the real thing and surprise them by telling them it's Keto.

She actually turned me onto bocha sweet, no contest the best sweetener ive ever tried, i made keto cinnamon rolls and used their powder sugar my family likes the keto better then regular frosting, no strange after taste whatsoever ❤❤❤ i know this recipe is going to be amazing 😊

Not gonna lie it was well over one occasion where I’d buy a pecan pie on my lunch break and I’d have the last piece the next day’s lunch break. I CAN MAKE A KETO VERSION? I can tolerate diet drinks so I’m sure I’ll be able to tolerate the artificially flavored pecan pie. I also don’t mind skipping out on the crust which would assumedly reduce the amount of carbs
The sweeteners I use aren't artificial.
I am hoping this works as good with allulose. I have dogs and don't want xylitol in my house. Whole Earth makes a baking blend with Allulose, Erythritol, Xanthan Gum, Stevia Leaf Extract, Monk Fruit Extract and it tastes better than anything I have tried and wonder if it would work for this.

Carolyn, my son was diagnosed as Type 1 Diabetic & his Dr has said to stay away from recipes noting "Net" carbs. That although subtracting what I think is the sugar alcohol.....???...is great for others but not in the case of those with Type 1.....Are your calculations of the carbs considering this equation?
