Some great suggestions! I make all my chicken marinades with whatever I’ve got. Then store the baggies in the fridge overnight before freezing them. Sometimes it’s as simple as olive oil and garlic powder. Often times it’s a combination of any number of things, like I almost always start out with Catalina dressing. Then add whatever I feel like using, sesame oil, peanut butter, mayonnaise, balsamic vinegar, orange juice, tamari, sweet chili sauce, crushed garlic, smoked paprika, liquid smoke, maple syrup, honey, thyme, savory.. use any combination. Don’t measure anything. Just pick 3 or 4 things you like and drop it all in the bag. I love this video as it gives me new ideas! Thank you! Btw, I do this for steak too, but let it marinate in the fridge for a day or two before freezing.
I won't recommend discarding the cilantro stems...they carry the most flavor...especially if your freezing first... if not i would recommend adding both the stems and leaves..just leave the stems long for easy removal...you can wrap the together with kitchen string for an even easier removal. As a Italian-American/Sicilian...we ALWAYS use the stems in marinades and if pulsing herbs together into pastes it's even better for the best flavor. Again you can always wrap them in a bundle for easy removal but if freezing 1st I highly recommend it. It's zero waste and MAXIMUM FLAVOR!
