Wow. I appreciate their hard work. I just can't get over how the rooms they work in make it look like they are in the construction business first, with the bakery as a side job. Also, all that lifting without any desks or anything, and ancient machines without any kind of emergency stop. That is scary work.

The dough is literally touching the floor, though... Plus do you think they keep track of which side they stepped on? I still admire their work, even though I wouldn't eat those noodles.

They literally roll the dough on their sweaty backs. The key is: the cooking/baking/fermenting/whatever process kills any germs. But yeah, you're getting a lot more than the main ingredients with your noodles/bread/wine.

古人可以想出這種方法製作麵線真的令人佩服。可以古法傳承到現在繼續製作也讓人敬佩。
傳統麵線的口感，咬勁，在筷子上在口齒中的那股子勁道，都不是現代化機器麵條可以比擬的。
只一個缺點，就是太鹹了，第一次自己煮麵線時苦著臉吃掉它。經過請教長輩後才知道要用大鍋水煮麵線，將其中的鹽分給沖掉。小氣的我捨不得大量的瓦斯(煤氣)煮大鍋水，於是發明在下鍋前在水龍頭下沖洗後立即下鍋，還好沒糊掉。
直到現在，在路邊攤叫一碗麻油麵線，叫一盤苦茶油拌麵，依然是三五好友聚餐時讓人愉悅的幸福餐點。
應該是怕壞掉才加鹽，現在塑膠包裝的基本上沒鹹味了
