Hi Miranda! I love these videos, they are my favourite. When my kids were little I used to cook like this most weeks. I was a stay at home mom for a few years and the struggle was real. But I grew to love to create everything from scratch and we were able to get by. It was a challenge, but a creative one. 💚

Love your video! Definitely will be trying the loaf for my family (also glutenfree myself because of tummy problems 😅), and the chickpea biscuits! We typically spend about 100 euros a week, but organic fruit & veg is so expensive... There are also a lot of pantry staples and freezer items always in our grocery hauls. I'm planning a pantry only (except for some fresh fruits and greens) month in may. Your videos are super inspiring!!!

For example, you can't find any dry beans for 1e, they are about 2e, but I believe oats might be cheaper here (but gluten free oats are like 3 times more expensive, than the regular ones).

Yes! My husband doesn’t love GF flours, as many ppl who can eat regular flour don’t love the texture! But I’m happy to make him some beautiful bread he will adore!
Re: baking with whole wheat, it's gluten that typically needs to be added to help with rising - I use 1 tsp per cup of we flour. Extra wheat germ would likely weigh down the dough - still delicious, you'd just end up with a dense, much heavier bread! 🙂💜
That's the peanut butter I would have gotten too! I prefer natural peanut butter, but do not like having to stir in the layer of oil at the top. The no-stir natural peanut butter is the best of both worlds!
That's the best thing about WinCo, they have peanut butter grinding machines. That's the only kind of peanut butter I like. It stinks though because another store much closer to me has the machines but never fills them. Everything about fresh ground is better, especially in things like peanut sauce! It's so good
I love how you use everything and don't waste anything. Also, dipping your fork in the sugar before pressing down on those cookies is a great way to keep up from sticking. I'll be giving those cookies a try. ❤️
Honestly I so wish I had you as a resource when I was in need. I got pretty creative with very little money (roughly $20/week for me and my boyfriend at the time, though we did use a local food back to supplement as well). But just seeing you make this food helps with any... I dunno. There is so much "Why are you poor" that comes from people and I just can't thank you enough for highlighting that these meals are good and are valid options. I'm happy and healthy and more than comfortable now, and meal planning/grocery shopping/cooking makes me so happy because it's always been a luxury.
We were at $30 a week and I for sure felt at times like if it wasn't for me creating on youtube we wouldn't have been able to do it! Sharing got me through it and continues to help me when we decide to cut WAY back! I still feel like spending $75 in a week is a luxury!

Anything more than that will inhibit the rise and will result in a pretty dense/not pillowy bread like you see here :) I have more on why that is in the blog post attached to the recipe if you're interested in some gluten science! 🤓 Whole wheat flour also absorbs more water than white flour, so add a bit more water (1/4 to 1/2 cup) as needed.
I love this video. You mentioned your adoption fund. Forgive the unasked for info, but have you looked into Foster/Adoption? We adopted two newborn babies (they are biological siblings) through foster care and it didn’t cost a dime, plus we got the adoption tax credit, foster care payments, and after adoption Medicaid until they’re 18, adoption subsidy, and they will get free college. We didn’t have any idea about the financial benefits before we did it. We just wanted a baby!! And we got two
We have looked into it, I will say it is different with each state and for myself I really hate the idea of there being so many unanswered questions with foster to adopt. It’s never a guarantee and I am someone who gets VERY attached and if for any reason wasn’t able to adopt that child I would be heartbroken. We have friends that have AMAZING success with foster to adopt and others who had children from birth to 3yo who were in the process of adoption when a distant relative stepped in and took over. Foster to adopt is hard and bless everyone who can do it! I don’t think it’s for me, but I am never someone to say no to anything!❤️ we plan to share our journey -- because I want those who follow me to see my heart and I think it will also give clarity!

What I discovered with our babies was that I was rooting for the birth parents to be able to overcome their drug addiction and get their babies back because I’ve always felt that, if possible, it’s best for babies to be with their birth parents. We were extremely lucky/blessed we didn’t have to give our babies back! But yeah, the days we had to go to court and see how the judge would rule were heart wrenching for us and our relatives.
I fostered a child thinking it would be forever but the birth mother came out of obscurity (and prison) when she was fifteen and she went from a secure stable home and a place in a grammar school, to a chaotic life of psychological mind games and a failing school - she had a child when she was 16, was put into a monitored mother and baby home for the safety of the child... (...oh and she blackmailed me after I had willingly given her a few thousand pounds to help her out). I have no contact with her now (she is 25), but constantly worry about her and her child, and I obviously blame myself as I had her for the first 15 years...

The most economical GF replacement for sandwich bread that I've found has been rice cakes. They work and are inexpensive but I do miss bread. The best place to buy rice cakes near me is Sprouts. They sell thin rice cakes (and corn cakes) in their brand for around $1.50
Would love a GF version! We are a family of 4 that is Gluten Free, Sugar Free, and Dairy Free. I'm sure it wont be 10 a week. But anything would be great!

If I made the cookie dough and kept it in the refrigerator until I wanted to bske a few, how long would it last if it's doable at all? Also, can it be frozen? I don't like sweets, as you know, and hubby doesn't need 4 dozen cookies! Or even a dozen. I could make a few at a time if the dough will last. Thanks.
It can definitely be frozen! For up to 6 months! I’d say it’d last about a week in the fridge but you can always make a way smaller batch! I’ve frozen Aquafaba before too!!

I’d love to see gluten-free, vegan, allergy friendly week. My house has people who are gluten sensitive, with allergies to pineapple, avocado and white fish. I’m not vegan but I do enjoy vegan and vegetarian options. I’m not a fan of meat but my family do enjoy meat so we eat meat. How do you balance your vegan diet with your husband’s meat eating diet? Would love to know how you work that so neither of you are insensitive to the other’s preferences. ⭕️❌
I’m very lucky he has minimal allergies! He’s allergic to pineapple and almonds! I have a lot more- plus sensitivities! When I decided to go plant based we talked a lot about changes in how I cook and I’m really thankful my husband isn’t picky and will eat anything! I’ve mentioned before he grew up vegetarian for religious reasons, his mom has been vegetarian her whole life! He didn’t eat meat until his late teens so this isn’t “new” to him. He’s very happy to eat potatoes pasta and green beans every day because that’s how he grew up! I do try to make him less GF options because they’re more enjoyable! I also do try to share when I make meals just for him or just for me to broaden the ideas I share! I’m with you - it can be very tricky with allergies or even preferences to make food for anyone in your family! I’m lucky right now it’s just the two of us but the adventure will continue as we add to our family! I do believe keeping it as simple as possible is what has helped us the most overall. I like to cook but I don’t make anything with loads of ingredients!
@@flourishingmiranda I’m amazed your husband is allergic to pineapple! Does he become anaphylactic around pineapple too? I’m told I do because I’m allergic to the bromeline, which is the part of the pineapple that gives its aroma, flavor and the biggest health benefits(anti-inflammatory, detoxification, aids in weight lost, blah blah blah) but I swell up like I’m trying out for Willie Wonka. I also found out the hard way that it takes at least three days for the bromeline to leave the house. Same thing happens to my mom with white fish and avocado. But, fave nephew, who also lives with us and helps me take care of Momma, is allergic to nothing and eats whatever I place in front of him. Thank you so much for sharing your life with us. I also adopted my kids. They were an emergency kinship placement by the state. I grew up with their mom and knew the kids since they where babies. I pray you are as blessed as I have been. No matter if you are adopting privately or through the foster care system. You are giving a loving home to a child/children who’s biological parents are unable to raise them.

Aww well the thing with youtube is its part illusion so keep that in mind! Just because I didn't share my meals doesn't mean I didn't eat :) Its just nice to try new recipes or old favs here and there to build off what continues to work for us!

Hi! Love your videos! You are so kind and helpful with your videos on budget meals! I am not at all trying to be rude or mean. I know you said in previous videos about sharing your adoption journey. Just please be careful in that. There are so many family vloggers that that gain millions of followers and make tons of money, but they are completely exploiting their children and their family’s privacy. It all becomes about views and money and just spirals. Please be careful and research the dark side of family vlogging. There was a huge scandal a couple of years ago with one who documented their entire adoption journey, then ended up re-homing their child. It was heartbreaking to see.
We only plan to share the PROCESS, our children will never be shown. I think sharing the “how to” is very different than what you’re saying with the family vloggers, and I know exactly what you’re talking about! ❤️ I also wanted to add really quickly- because everyone’s different, whatever someone choices to share is rightfully up to them!❤️ it’s really unfortunate that things happen but we also don’t know the ENTIRE story, just what is portrayed ❤️ remember we’re not in others homes with them day to day, UA-cam is an illusion! Creators only share what they decide to share!

I would love to try those cookies. However the time and temp are not listed in the given recipe. Would be most helpful if I could get that! I'm not completely vegan or vegetarian. I usually don’t put temps/times because ovens vary! (Gas vs electric!) 350/10-12 minutes is pretty normal for all cookies so I assume everyone will start with those temps!❤️

Have you tried making the bread with Gluten Free Self Raising flour, Miranda? I’m curious if it turned out the same. Because GF flour isn’t as good as normal flour. Loved your video 👌👌❤️
I have and it just didn't come together! it was very crumbly and needed an extra "something"! I do make an almond flour bread that is amazing BUT not super budget friendly because almond flour is EXPENSIVE (to me anyways!!)

LOVE these extreme low budget videos! My grandmother-in-law gets $16 a month in food stamps and always needs ideas to help stretch her budget. Wish you would put the ingredients on the screen. It's nice to watch the food being made but would feel less lost if, like other videos, I could follow along with what you're combining.

The food I made in this video was for my 275 lb power lifting husband 🤣 And you should never comment on someone’s body unless they’re asking you to!❤️ I’ve been all over the map body wise, and unless you know someone’s full story and are asked to chime in it’s uncalled for and it seems unkind and demeaning.

If you wet your fork with water it won’t stick to the cookie dough and it makes it much easier. 😊

If I made the cookie dough and kept it in the refrigerator until I wanted to bske a few, how long would it last if it's doable at all? Also, can it be frozen? I don't like sweets, as you know, and hubby doesn't need 4 dozen cookies! Or even a dozen. I could make a few at a time if the dough will last. Thanks.
It can definitely be frozen! For up to 6 months! I’d say it’d last about a week in the fridge but you can always make a way smaller batch! I’ve frozen Aquafaba before too!!

I will be trying those peanut butter cookies this week for my hubby's crew at work. Do you think almond flour would work in place of all purpose flour? (so I could enjoy one?) Hi, Miranda! I love seeing when you have popped up a video! Love to see how you and your husband interact. You both are so funny. I would love to see a gluten free week. I’d love to see gluten-free, vegan, allergy friendly week. My house has people who are gluten sensitive, with allergies to pineapple, avocado and white fish. I’m not vegan but I do enjoy vegan and vegetarian options. I’m not a fan of meat but my family do enjoy meat so we eat meat. How do you balance your vegan diet with your husband’s meat eating diet? Would love to know how you work that so neither of you are insensitive to the other’s preferences. ⭕️❌
I’m very lucky he has minimal allergies! He’s allergic to pineapple and almonds! I have a lot more- plus sensitivities!
When I decided to go plant based we talked a lot about changes in how I cook and I’m really thankful my husband isn’t picky and will eat anything! I’ve mentioned before he grew up vegetarian for religious reasons, his mom has been vegetarian her whole life! He didn’t eat meat until his late teens so this isn’t “new” to him. He’s very happy to eat potatoes pasta and green beans every day because that’s how he grew up!
I do try to make him less GF options because they’re more enjoyable! I also do try to share when I make meals just for him or just for me to broaden the ideas I share!
I’m with you - it can be very tricky with allergies or even preferences to make food for anyone in your family! I’m lucky right now it’s just the two of us but the adventure will continue as we add to our family!
I do believe keeping it as simple as possible is what has helped us the most overall. I like to cook but I don’t make anything with loads of ingredients!
@@flourishingmiranda I’m amazed your husband is allergic to pineapple! Does he become anaphylactic around pineapple too? I’m told I do because I’m allergic to the bromeline, which is the part of the pineapple that gives its aroma, flavor and the biggest health benefits(anti-inflammatory, detoxification, aids in weight lost, blah blah blah) but I swell up like I’m trying out for Willie Wonka. I also found out the hard way that it takes at least three days for the bromeline to leave the house. Same thing happens to my mom with white fish and avocado. But, fave nephew, who also lives with us and helps me take care of Momma, is allergic to nothing and eats whatever I place in front of him.
Thank you so much for sharing your life with us. I also adopted my kids. They were an emergency kinship placement by the state. I grew up with their mom and knew the kids since they where babies.
I pray you are as blessed as I have been. No matter if you are adopting privately or through the foster care system. You are giving a loving home to a child/children who’s biological parents are unable to raise them.

Aww well the thing with youtube is its part illusion so keep that in mind! Just because I didn't share my meals doesn't mean I didn't eat :) Its just nice to try new recipes or old favs here and there to build off what continues to work for us!

Hi! Love your videos! You are so kind and helpful with your videos on budget meals! I am not at all trying to be rude or mean. I know you said in previous videos about sharing your adoption journey. Just please be careful in that. There are so many family vloggers that that gain millions of followers and make tons of money, but they are completely exploiting their children and their family’s privacy. It all becomes about views and money and just spirals. Please be careful and research the dark side of family vlogging. There was a huge scandal a couple of years ago with one who documented their entire adoption journey, then ended up re-homing their child. It was heartbreaking to see.
We only plan to share the PROCESS, our children will never be shown. I think sharing the “how to” is very different than what you’re saying with the family vloggers, and I know exactly what you’re talking about! ❤️
I also wanted to add really quickly- because everyone’s different, whatever someone choices to share is rightfully up to them!❤️ it’s really unfortunate that things happen but we also don’t know the ENTIRE story, just what is portrayed ❤️ remember we’re not in others homes with them day to day, UA-cam is an illusion! Creators only share what they decide to share!

I would love to try those cookies. However the time and temp are not listed in the given recipe. Would be most helpful if I could get that! I'm not completely vegan or vegetarian. But rarely eat meat anymore. I do love my cheese! So.. but I would like to give some of these a go! Thank you for sharing.
I usually don’t put temps/times because ovens vary! (Gas vs electric!) 350/10-12 minutes is pretty normal for all cookies so I assume everyone will start with those temps!❤️

Have you tried making the bread with Gluten Free Self Raising flour, Miranda? I’m curious if it turned out the same. Because GF flour isn’t as good as normal flour.

I have and it just didn't come together! it was very crumbly and needed an extra "something"! I do make an almond flour bread that is amazing BUT not super budget friendly because almond flour is EXPENSIVE (to me anyways!!)

LOVE these extreme low budget videos! My grandmother-in-law gets $16 a month in food stamps and always needs ideas to help stretch her budget.
Wish you would put the ingredients on the screen. It's nice to watch the food being made but would feel less lost if, like other videos, I could follow along with what you're combining.
