    I made these Taco bowls for dinner tonight and they were delicious! I even mixed in a can of pinto beans for a different texture and tossed in half a can of fire roasted tomatoes with taco seasoning wow I will be eating this all the time so good!

    We purchased this same patio set. You’re right, it was a bit of a challenge to assemble, but we absolutely love it. So comfy.
    My 11 year old is newly vegetarian and the only one in the family so I’ve enjoyed watching your videos for ideas for her.

    theres a mexican dish called TInga made with chipotle salsa(normally made with chicken). most grocers sell small cans of it. i saute onions then add the already cooked lentils and mix half or the whole can depending how much you are making and it is so delicious. the best part is, chipotle salsa is smokey and not that spicy at all, SO much flavor and a good mix for a mexican dinner

    I love Bob's Red Mill! It's a local to me company and their store sells in bulk as well as packaged. Sometimes it's nice to try out just a small amount of something we haven't tried before

    In Portugal, we call those cucumbers "dutch cucumbers", so they change nationality depending where you are based!

    We process and prep pounds of greens every week for our plant based family of 8 and a good salad spinner is my best friend to get a ton of the water off!

    I must say the snazzy jazzy piano music took it over the top for me in the very best way. Totally awesome. I used to make cheese and fruit and other snack boards back in the 80s when I ate all that stuff. I just haven’t thought about doing it for myself with plant-based items but you made it look so fun and so fab!!! Love it!♥️🥰

      Oh the snack boards are my FAV for not cooking but having an amazing meal! Perfect for anytime! And leftovers! Skies the limit with options!

    I use white vinegar to wash my produce too but I leave it to soak for 15 minutes before rinsing it well. I soak the whole item such as the ends of celery, the carrots before I peel them, that way the celery ends and carrot peels are clean before I freeze them for using to make broth/stock later. The vinegar soak does not make anything smell or taste like vinegar because I rinse it well.

      Yes same! I soak for 15-20 minutes and nothing tastes weird or funky and your veggies stay so fresh for such a long time!

    You could have used the juice off the pineapple and mandarin oranges as well. If not in your smoothies with the strawberry tops, it makes a great fruit sauce. Save it in a pan, bring it to a boil, add a splash of vanilla and a little agave, and thicken with a corn starch slurry. We also sometimes add in coconut flakes. Warm it’s great over pancakes and cooled it’s good stirred into your fruit salad.

    Hi Miranda! This was a great video. I love sheet pan meals in the fall when all the beautiful roasting veggies are coming in from the garden. All of your food was so beautiful and colourful.     Aldi in Riverside county area had dry pint blueberries for $1.59 ( approx 16 oz) Did I buy 8? Absolutely! Blueberry compote topping for waffles & French toast & nice cream, added to a summer salad, in a smoothie, in my water, or eaten as is. So excited, especially after seeing a watermelon for$10 at Costco! Crazy prices out there!
    Great meal ideas. I am decanting because of you. Love looking at it & the glass makes it feel like a proper presentation.
    I use organic food wash, but once it's gone I'll be using vinegar too.
    Never heard of strawberry toppings in smoothies. Just threw mine away 3 days ago (got organic berries for $2, stocked up). Love salad keeper, need that!

      I went to Costco a few weeks ago and found some GREAT deals but I will say - produce I always have found to be less in a smaller grocery!

    I loved this video!! Just wish I could get my hubby to go plant based. His lunches alone for work for one week is almost $20. I can’t get him to take leftovers as he doesn’t have to clock out for lunch and he may eat a few bites and help a customer.
    I’m kicking off plant based eating today and weight loss so I will be using your awesome tips for meals at least for me!!

    Another great video and I always call those English cucumbers 🙂 as well. I have been saving my jars because they don’t pick up the glass recycling anymore where I live so I have been enjoying decanting ingredients.

    If the canned fruit is just in water(juice) why not keep it to add to smoothies? Sometimes I replace water with pineappple juice when I make bread.

    So I've been making sweet potatoes in my IP. Let them cool and peel the outer peel right off. I then chunk up the sweet potato and put them in my air fryer with some sea salt. Omg! Yum! I haven't found a really good chipotle ranch dressing that is super good on them that is vegan or plant based. Love them! Hey aren't you in Las Vegas? My cousin just moved to Henderson, 15 min from the strip. We have an open invitation to visit her. Can't wait to feel the heat out there! I'm in Wisconsin, so this will be a welcome experience.

    Hannah sweet potato. Interesting. Not something I have seen here in southeast Texas.
    So many great meal ideas. Love the snack board idea. Looked so delicious.
    I make energy balls similar to the ones you make your husband but now I am liking the idea of adding carrots to it. I cant eat flax seed so I use protein powder instead.

      The Trader Joe’s sweet potato is similar texture / test!! Their Japanese one!!
      And we like protein in our energy bites too! I throw just about anything in them and call it a day! They’re so flexible and I think everyone can add anything they’d like and enjoy!

      @@flourishingmiranda oh okay. I normally have been getting the sugar free kind which is in water and sweetened with Splenda I think. It helps with the calories and sugar because canned pears are one of my SAFE foods for my digestive issues. I had never heard of the tops idea 💡 in smoothies before. How did it taste?

      Mine is a few years old and I completely forgot I had it! I was using it for storage 🤣 but it’s nice because the water drips to the bottom keeping it nice and fresh!
      And my tummy / digestion hates avocado-- not sure if it’s the item or the fats I didn’t test positive for an allergy but if I eat it my stomach hates me!

    I've started using the celery tops in soups. I think it adds some flavor without being too celery-y 😅 I think it would be good in some pasta salad/mayo based salad like chicken or tuna...I know you're vegan but I don't know what else to call what I'm thinking of! 😂 I think you recently made a salad that was a vegan tuna/chicken like salad... or maybe I'm mixing up my channels!

      Yes I make a chickpea salad ALL THE TIME! I save my celery tops in a freezer bag to add to my other odds and ends to make veggie broth!
