Scrambled Tofu and Potatoes

  • Scrumptious dish perfect for breakfast or brunch, it is simple and yet so filling. No animal products necessary and the spices used to mimic the taste and looks of eggs do a great job.
    Ingredients for 4 servings:
    2 Large Potatoes
    1 Package 18oz or 510 grams of Firm Tofu
    1 Large Onion
    2 Tablespoons of Turmeric,
    1 Tablespoon of garlic powder
    1 Teaspoon of Salt,
    1/2 Teaspoon of Black Pepper,
    1 Tablespoon of Soy Sauce

    P.S
    You can add other vegetables or mushrooms if you want to make it fancier. My family enjoys the above version a lot, including my young son.
