- Here's the delicious side dish that goes perfectly with the Chicken with Vinegar recipe I posted yesterday. I love cabbage, especially Savoy cabbage. Grandma Rosa taught me this recipe, and I have been cooking it ever since. It is a dish that can be made in abundance and reheated the next day. Adding vegetables to mashed potatoes is common in the Italian tradition, and it really lightens the potatoes up. The vegetable can vary - green beans in the spring, Swiss chard as it becomes available. I also give you a quick course on all the different vingar varieties and the best way to use them. Mashed potato’s with cabbage is the Irish dish colcannon which is yummy.
We've cooked potatoes and cabbage together many many times but never thought of mashing it or putting the garlic in it. We WILL be trying it this way now!

Isn’t that Colcannon? Seasonings may be different with garlic and olive oil instead of butter and milk. Looks yummy too. Lighter than traditional colcannon. Both versions seem a bit bland. I usually make it similar to your recipe and I add a sodium free broth from whatever meat I’m serving at dinner. Lean pork loin or chicken usually. I am also on a low FODMAP DIET where cabbage and potatoes are great combo. Since garlic and onions are not something I can eat but I make my own infused olive oil with these flavors. It’s a great remedy so I can maintain my healthy diet. Love your recipes Lidia!!!❤

Just the other night I boiled savoy cabbage and just fried it a little. It was late - so I drained the cabbage and put it in a ziplock in the freezer. A friend brought me a box of produce from the NYC Food Pantry. The Savoy Cabbage was one I took. This is what I'm going to do with that Savoy Cabbage.

So Italian bubble and squeak! 🤣 It's often claimed that spring greens (a variety of Brassica oleracea closely related to both curly kale and collard greens) is the vegetable to use for proper bubble but with savoy cabbage plentiful all year round that is what is normally employed.

It could've been she couldn't find them. I've been searching for Savoy cabbage every early summer, never see any. I'd use nappa cabbage. Still looks pretty good 👍 👌 😋
