Ingredients
1 Can (29 ounce) Pumpkin Puree
3 Eggs
1 Can Evaporated Milk
1/2 Cup Sugar
1/2 Cup Brown Sugar
2 Tablespoons Pumpkin Spice
1 Teaspoon Cinnamon
1 Teaspoon Vanilla
1/4 Teaspoon Salt
1 Yellow Cake Mix
1 Cup Butter, melted
Whipped Cream or Vanilla Ice Cream
Instructions
1. In a mixing bowl, combine the pumpkin puree, eggs, evaporated milk, sugar, brown sugar, and pumpkin spice.
2. Spray a 9x13 baking dish with cooking spray and pour in the pumpkin mixture.
3. In another bowl, mix the cake mix with melted butter. Sprinkle over the pumpkin.
4. Bake the cobbler at 350 degrees for 60-65 minutes, or until a knife inserted comes out clean.
5. Allow to cool on a wire rack, then slice and serve with whipped cream or a scoop of vanilla ice cream.
