    Cinnamon & lemon cake
    Ingredients
    125 g (4 oz) butter or margarine
    125 g (4 oz) light brown sugar
    2 eggs
    125 g (4 oz) self-rising flour
    1 tbsp cinnamon
    1 lemon juiced & zest
    method
    STEP 1
    in a mixing bowl put the butter or margarine
    and sugar and lemon juice & zest and mix
    until pale.
    STEP 2
    add the eggs one at a time and mix together
    then add the flour, and cinnamon and mix it all together
    then turn out into a greased and lined 20 cm (8 inch)
    loose-bottomed cake tin and smooth the surface.
    STEP 3
    bake in a preheated moderate oven, 180 c (350 f) gas mark 4,
    for 35 -45 minutes, until a skewer inserted into the center comes out clean.
    STEP 4
    leave in the tin until cold, then
    carefully push out and slide onto a serving plate.
