Making simple and delicious homemade chicken and mushroom pie using store bought puff pastry

Everyone loves a good pie every so often so I wanted to share my home made version of a chicken and mushroom pie that is simple and delicious to make using store bought puff pastry.
Ingredients:
3 chicken breasts ~ 350g
1 tbs mayonnaise
1 tsp chicken spice
1/2 tsp dried thyme
1 tsp crushed ginger and garlic
Splash of lemon juice
To braise
Splash of olive oil
1 medium onion, finely diced
250g button mushroom, sliced
250ml fresh cream
1 tbs flour
Salt and pepper to taste
1 tsp vegetable stock powder
garnish
For pie
1 roll of Today puff pastry
egg wash
sesame seeds to garnish - optional
Serve with a side salad for a great lunch time option!
