Thank you. I’m on a low-lectin diet so I cannot eat rice flour or potato flour either. But I’m going to try sweet potato flour and tapioca and see whether it works. The secret might be the hot water. Thanks for the idea.

I love eating gzoya. Potato starch is hard to find in stores or so pricey, that I wonder if tapioca or sweet potato starch can be used instead.
Standard soy sauce contains gluten though, so you need to pick a gluten-free soy sauce option.
Just so you need to choose GF soy sauce
