I made a braised cabbage dish a couple days ago, from a recipe from Helen Rennie. It used cannellini beans and tomatoes. I figured I should eat more cabbage, since it's SO affordable and versatile, AND good for you. Do I detect an Aussie accent?
I love your videos! I especially love that you always explain WHY to do something, not just how. E.g. why to start the cabbage with only salt for the pasta recipe, and why it doesn't matter how small you chop the veggies for the cabbage rolls. So informative, thank you!

Hi Masa, your cabbage recipes are excellent. This days I am eating cabbage because it has a lot of benefical things and I learned from you how cook it with little water.
Looks good but will definitely have to make some adjustments. Conscious of my salt and oil intake because of health reasons. Red flags go off when I see a tablespoon of salt go into any recipe.
I made the stuffed cabbage rolls this afternoon and my wife and I ate them this evening. I followed your instructions to the letter and everything worked out fine as far as separating the cabbage leaves, making the filling, folding the rolls and making the sauce. As far as the taste of the dish, though, that was not so good. The texture of the filling was very good, but the dish was incredibly bland, and basically tasteless. The sauce, particularly, was a great disappointment as it had no taste. And, really, why should it when the only seasoning was provided by two bay leaves, and the shredded cabbage. My wife and I ate two rolls each, and then I disposed of the other four rolls as I couldn't see myself wanting to eat the dish again. Sorry, this was a loser for me.

These recipes can’t be heartfelt if you are adding so much oil and salt. These dishes can be made without oil and or salt.
