Hey Arnold! A little late on commenting but, GOOD FOR YOU! Changing your lifestyle is always challenging but, as you said, not so hard if you choose a sustainable lifestyle. You have figured out how to make it sustainable for you (taking your favorite recipes and "massaging" them as needed.) Love the idea of using cabbage in lieu of pasta. Being Keto since 2019, have used thinly sliced cabbage in the past as a "bed of something" for all kinds of things to be placed upon. Shockingly, never thought to saute it first! Definitely going to try this! My husband was recently diagnosed with type 2 diabetes and, like you, refused medication and is changing his diet. I have used zucchini and spaghetti squash in place of pasta but never thought about cabbage. Thanks!
There is a thin dry noodle by the Brand Liviva (they also make shirataki too). I boil it in almond milk, cream, ginger garlic and seasonings, and onion powder, to take the taste up a notch....sesame oil ...if I am making low mein/chow mein.
Metformin actually has a lot of health benefits even besides diabetes maintenance. Some studies indicate metformin users are less likely to get certain cancers. You should look into it before rejecting it.

I got off of Metformin with weight loss. Good for you for avoiding it altogether! I'll definitely try this sometime.
