Lebkuchen 170g Honey 200g Dark brown Sugar 60g Butter 1 Egg 1 tsp Lemon Zest 300g Flour 100g ground Almond 1 tsp Baking Powder 1/2 tsp Baking Soda 1/2 tsp Salt 2 tsp Cinnamon Powder 1/4 tsp Ginger 1/4 tsp Clove 1/4 tsp Nutmeg Glaze 120 g Icing Sugar 1 Egg white 1 tsp Lemon Juice 1/2 tsp Vanilla Method 1. Heat honey ans dark brown sugar in a pot, on a medium heat while stirring with a wooden spoon until its all melted 2. Take it off the heat and add in the butter. Stir until the butter melts and is fully incorporated into the batter 3. Add the lemon Zest, Baking Soda, Baking Powder, Salt and the spices ans stir 4. Add the egg and stir 5. Add the flour and ground almond and mix until the batter has come together 6.Cover this with some cling film and leave in the fridge for 2 days 7. 2 days later, Preheat the oven to 180 C 8. Take the dough out of the fridge and leave for about 10 mins 9. Flour the work surface and roll the dough out to about 1/2 a cm in thickness and cut out the cookies. Use a mix of circle, stars, trees and gingerbread men cookie cutter to cut out the shapes 10. Keep on a lined Baking pan, with a gap btwn each cookie 11. Bake for about 12 mins 12. While the cookies are Baking, mix together icing sugar, egg white, lemon and vanilla to form a runny paste 13. Once rhe cookies are out of the oven let it cool for abt 5 mins. Then brush on the braze while it's still warm. 14. Let it cool down and enjoy!
@medhini.s5810 the middle stays nice and soft. They are meant to get better with time but i can never keep them long enough to see cos we end up finishing it within a few days.
