Just wanted to say, awesome job! My Grandmother (Nana) was born in Germany, and her parents were bakers and owned a bakery before WW2. I grew up getting a tin of Lebkuchens each year at Christmas, and loved them!
I can answer your question from early in the video, yes, the American equviilant of Treacle is Molassas. That is what my Nana always used, and is in the recipe she passed down to me. Also, ours were always cut into squares, with an almond in pressed into the center, and the icing was not just sugar icing, but also had candied fruit zest (lime, lemon and/or orange) mixed into it.

Thank you! And for the information about molasses! That's very interesting. 😃

I’ve heard of these before. In Germany they mean “Life Cakes”, although some people call them biscuits as well. I’ve tried the actual cakes from them. They are scrumptious. 😋

I am so excited to make this for my family this Christmas. I had Lebkuchen once before and there was a texture similar to coconut inside. Is it possible it was made with coconut or is there an ingredient that has the same texture?

So it might be the ground almonds that have that texture. It's more coarse than flour, so I imagine that it's what it was. But I don't see why you couldn't substitute out the ground almonds for dessicated coconut. It wouldn't be traditional, but I'm sure it would be tasty!
