Easily The Best Garlic Herb Roasted Potatoes

    Here is what you'll need!
    THE ULTIMATE ROAST POTATOES
    Servings: 5-6
    INGREDIENTS
    13 4-lb russet potatoes, cut into 1-inch pieces
    1 teaspoon baking soda
    1 teaspoon salt
    ¼ cup olive oil
    2 tablespoons garlic, minced
    2 tablespoons rosemary, finely chopped
    1 teaspoon black pepper
    More salt & pepper to taste
    Small handful fresh parsley leaves, minced to garnish
    PREPARATION
    Preheat oven to 425°F/220°C.
    Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir. Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
    Combine olive oil, rosemary, garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes. Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
    Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
    Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly. Transfer to oven and roast, without moving, for 30-35 minutes. Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
    Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.

    I've always wondered how to make these!!! My nan used to make them but she would not tell me her recipe because that was one of my favorite things she would make. So, I'd go to her house at least once a week for these!

      It's doesn't matter. Recipes cannot be copyrighted because it is meant to be shared and taught so others can actually try the recipes.
      Try searching "Salmon Teriyaki" here on YT, I'm sure you'll be surprise why most videos shows exactly the same method. You can't say that someone else stole your "Salmon Teriyaki" recipe. You all know as well that Kenji is a chef, he knows how to improve this dish further

    I've made these twice now. The first time I baked @ 350 degrees for about 50 minutes then cranked it up to 425 the remaining time. They were crispy on the outside and tender on the inside. I then made a second batch and cooked them for 1 hour @ 425 degrees, they were very crunchy and not as tender.

      Kaitlyn Kilpatrick. Onlu Americans use so much bacon that everybody has its fat put away. I think the last time I bought bacon was 5 years ago for a specific recipe. We try not to eat so much fat.

      I think you need a lesson in plagiarism and how to spot it. Case in point: Check the description where it says "INGREDIENTS 13 4-lb russet potatoes" Have you ever seen a 4 pound potato? I don't think so. It's because Kenji Lopez-Alt's recipe calls for 4 pounds of russet potatoes and not 4 pound potatoes.     It isn't a bad idea to add that filtered garlic, thyme, etc. back over the potatoes a few minutes before pulling from the oven. That's the only thing I do differently with my own.

    That oil seasoning mix that you made and poured on the potatoes is good. But a better tip would be to use the seasonings you strained out and added them to the potatoes during the last few mins of roasting. Now that would have taken them to the next level!!
